This recipe was given to me by a friend of my wife. It is the best bean pie I have tried, and I've tried quite a few. I use a convection oven so I'm a little lenient with the bake time. My oven bakes a little faster than regular ovens. I am working on a chocolate version, a low fat version and a sugar free version of this pie. I'll post these recipes as soon as I perfect them.

Number Of Ingredients 12

2 cups cooked navy beans
1/3 cup butter
2 tablespoons flour
4 eggs
1 (14 ounce) can evaporated milk
2 cups sugar
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon salt
1 tablespoon vanilla extract
1 unbaked 9 inch pie crust

Steps:

  • In a food processor add all ingredients.
  • Mix on low speed for 1 minute or more, until smooth and no lumps remain.
  • Pour into pie crust.
  • Bake in a 350 degree preheated oven for 45 to 60 minutes.
  • Top will be golden brown.
  • Cool on a wire rack.
  • Serve warm or cold.
  • Refrigerate leftovers.

I got hooked on the Bean Pie I used to get from the Muslim bakery back home, so had to try and recreate it! This is very good and reminds me of pumpkin pie, except it's made from beans. :-) (To get the beans smoothly mashed, I would recommend a food processor).

Number Of Ingredients 11

1 unbaked 9-inch pie shell
2 eggs, lightly beaten
1 cup evaporated milk
2 cups cooked and mashed navy beans
3/4 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon clove
whipped cream (optional)

Steps:

  • Preheat oven to 425 degrees.
  • Combine eggs and evaporated milk in a bowl.
  • Add beans, sugar and all spices.
  • Beat at low speed of a mixer until well blended.
  • Pour into unbaked pie shell.
  • Bake at 425 degrees for 15 minutes.
  • Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean.
  • Serve warm with whipped cream or you can even enjoy it cold. :-).

Tips:

  • For a crispy crust, use cold butter and work it into the flour until it resembles coarse crumbs.
  • Do not overwork the dough, as this will make it tough.
  • Chill the dough for at least 30 minutes before rolling it out.
  • Use a sharp knife to cut the dough into even pieces.
