Categories     Mushroom     Sauté     Vegetarian

Yield serves 2 people generously

Number Of Ingredients 9

1 medium onion, diced
2 garlic cloves, diced
1 tablespoon butter
8 oz. white button mushrooms, cleaned and thickly sliced
3/4 cup sour cream
1 1/2 teaspoons paprika
1/4 teaspoon dried thyme
2 tablespoons dry sherry
salt and pepper to taste

Steps:

  • Melt the butter in a large skillet over medium heat. Add the onions and garlic and saute until golden and fragrant, about 5 minutes. Add the mushrooms and cook 5 minutes more. Stir in the sour cream, paprika, thyme, and sherry and coat the vegetables with the sauce. Cook together until the mushrooms are tender, about 10 minutes. Remove from heat. Serve over buttered noodles.

Tips:

  • Choose the right mushrooms. Cremini, shiitake, and oyster mushrooms are good choices for this dish.
  • Slice the mushrooms evenly. This will help them cook evenly.
  • Use a large skillet or Dutch oven. You need enough space for the mushrooms to spread out in a single layer.
  • Don't overcrowd the skillet. If you do, the mushrooms will steam instead of sautéing.
  • Cook the mushrooms over medium-high heat. This will help them brown and develop flavor.
  • Stir the mushrooms frequently. This will prevent them from sticking to the pan.
  • Add the paprika and other spices towards the end of cooking. This will prevent them from burning.
  • Serve the mushrooms paprikash over egg noodles, mashed potatoes, or rice.

Conclusion:

Mushrooms paprikash is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover mushrooms.

The key to making a great mushrooms paprikash is to use fresh, flavorful mushrooms and to cook them properly. Be sure to slice the mushrooms evenly and to cook them over medium-high heat until they are browned and tender. Don't overcrowd the skillet or the mushrooms will steam instead of sautéing.

Once the mushrooms are cooked, add the paprika and other spices. Be careful not to add too much paprika, as it can easily overpower the other flavors in the dish. Serve the mushrooms paprikash over egg noodles, mashed potatoes, or rice.
