2 lbs fresh mushrooms
1/4 lb bacon, diced
1/4 cup butter
2 large onions, diced
1 cup white wine
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 pinch nutmeg
1 pinch mace
1 cup heavy cream or 1 cup half-and-half
1 1/2 tablespoons fresh lemon juice (juice of 1/2 lemon)
2 sprigs parsley

Steps:

  • Clean mushrooms and slice in half if large.
  • Pat dry.
  • Fry bacon in a large pan until lightly browned.
  • Remove from pan and reserve.
  • Add the butter to the pan drippings.
  • Add onions; saute until lightly browned.
  • Add mushrooms; cook until tender, stirring often.

1 cup heavy cream
1/2 leek, roughly chopped
