TORTA DI RISO
I made this delicious and rustic torta di riso with fresh spinach and leeks, but the recipe is a perfect catch-all for those abundant summer vegetables. Things like eggplant, peppers, beans, and squash all work beautifully. Just cut them kind of small, cook them tender, and let the rice, cheese, and eggs do the rest.

Steps:
- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

Tips:
- Use a good quality puff pastry: This will make a big difference in the final product. If you can, find a puff pastry that is made with butter, not margarine.
- Don't overfill the pastry: If you put too much filling in the pastry, it will be difficult to fold and seal properly. It will also make the torta more difficult to cook through.
- Use a variety of vegetables: This will give the torta more flavor and texture. Some good options include mushrooms, spinach, artichokes, and bell peppers.
- Don't be afraid to experiment with different cheeses: There are many different types of cheese that can be used in a mushroom spinach and cheese torta. Some good options include mozzarella, cheddar, Parmesan, and goat cheese.
- Serve the torta warm: This is when it will be at its best. You can reheat it in the oven or microwave if you need to.
Conclusion:
A mushroom spinach and cheese torta is a delicious and versatile dish that can be served for breakfast, lunch, or dinner. It is also a great way to use up leftover vegetables. With a little planning, you can easily make this dish ahead of time and reheat it when you are ready to serve. So next time you are looking for a quick and easy meal, give this mushroom spinach and cheese torta a try. You won't be disappointed!
