SPINACH AND MUSHROOM SMOTHERED GRILLED CHICKEN RECIPE - (4.5/5)

Spinach and Mushroom Smothered Grilled Chicken Recipe - (4.5/5) image

Provided by á-160091

Number Of Ingredients 8

3 cups fresh baby spinach
1 3/4 cups fresh mushrooms, sliced
3 green onions, sliced
2 tablespoons pecans, chopped
1 1/2 teaspoons olive oil
4 (4 ounce) boneless skinless chicken breast halves
1/2 teaspoon rotisserie chicken seasoning
2 slices reduced-fat provolone cheese, halved

Steps:

  • In a large skillet, sauté the spinach, mushrooms, onions and pecans in oil until mushrooms are tender. Set aside and keep warm. Sprinkle chicken with seasoning. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill chicken, covered, over medium heat or broil 4 inches from the heat for 4 to 5 minutes on each side or until a meat thermometer reads 170°F. Top with cheese. Cover and grill 2 to 3 minutes longer or until cheese is melted. To serve, top each chicken breast with reserved spinach mixture.

Tips:

  • Choose the right mushrooms. Cremini, shiitake, and oyster mushrooms are all good choices for this dish. Avoid using delicate mushrooms like chanterelles or morels, as they will break down too much during cooking.
  • Use a heavy-bottomed skillet. This will help to prevent the chicken from sticking and will also help to brown the mushrooms evenly.
  • Don't overcrowd the skillet. If you add too much chicken or mushrooms to the skillet, they will not cook evenly. Cook the chicken and mushrooms in batches if necessary.
  • Cook the chicken until it is browned and cooked through. The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit.
  • Add the mushrooms and cook until they are softened and browned. The mushrooms should be cooked until they are tender but still have a little bit of bite to them.
  • Add the sauce and simmer. The sauce should be simmered for at least 15 minutes, or until it has thickened.
  • Serve immediately. Mushroom smothered chicken is best served hot, over mashed potatoes, rice, or pasta.

Conclusion:

Mushroom smothered chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of tender chicken, savory mushrooms, and flavorful sauce is sure to please everyone at the table. With a few simple tips, you can make sure that your mushroom smothered chicken turns out perfectly every time.
