EXOTIC MUSHROOM AND WALNUT PATE

Exotic Mushroom and Walnut Pate image

I got this recipe from a winery at a tasting. It is so delicious on French bread with some wine. For a chunkier consistency, you can fold in additional chopped walnuts at the end. I couldn't stop eating it at the tasting and neither could any of the other tasters!

¼ cup chopped fresh Italian parsley
1 tablespoon chopped fresh thyme
½ teaspoon salt

Turkey, Chicken Liver, and Mushroom Pâté image

Categories     Food Processor     Chicken     Mushroom     turkey     Bake     Cocktail Party     Buffet     Ham     Spice     Brandy     Chill     Gourmet

Number Of Ingredients 19

1 medium onion, quartered
2 garlic cloves
1 pound cremini mushrooms, trimmed and halved (quartered if large)
1 teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon freshly grated nutmeg
Pinch of ground cloves
Pinch of ground cinnamon
1 (1-ounce) piece of baguette, crust discarded and bread torn into small pieces (1/2 cup)
1/4 cup fat-free milk
1 large egg white, lightly beaten
1 tablespoon chopped fresh flat-leaf parsley
2 tablespoons brandy
3/4 pound ground turkey (mix of dark and light meat)
1/4 pound chicken livers, trimmed and cut into 1/2-inch cubes
1 (1/4-pound ) piece cooked ham, cut into 1/2-inch cubes
Accompaniments: toasted baguette slices and Dijon mustard
Special Equipment
a 6-cup ceramic terrine or an 8- by 4-inch glass loaf pan

Steps:

  • Preheat oven to 350°F.
  • Pulse onion and garlic in a food processor until finely chopped. Add mushrooms and pulse until finely chopped, scraping down bowl frequently, then stir in salt, pepper, and spices (this makes a duxelles).
  • Cook duxelles in a 12-inch nonstick skillet over moderate heat, stirring, until a shade darker and most of liquid mushrooms give off has evaporated, about 10 minutes. (Duxelles should not be dry in this recipe.)
  • Soak baguette pieces in milk in a large bowl until milk is absorbed. Stir in egg white, parsley, brandy, turkey, liver, and ham, then duxelles until combined well.
  • Spoon into lightly oiled terrine and bake, uncovered, in middle of oven until an instant-read thermometer inserted 2 inches into center registers 170°F and top is firm and browned, about 1 hour and 10 minutes. Transfer terrine to a rack and cool. Chill, covered, at least 8 hours (overnight) for flavors to develop.
  • To unmold pâté, drain off any liquid in terrine, then loosen bottom with a spatula. Invert pâté onto a plate, then reinvert onto a serving platter. Cut into slices with a serrated knife and bring to room temperature.

MUSHROOM & NUT PATE

Mushroom & Nut Pate image

Found this recipe years ago, and don't even remember where it came from. I've tweaked this endlessly, adding parmesan cheese, different nuts, combinations of mushrooms, and different seasonings. If you like mushrooms and nuts, you'll like this. The recipe even looks like a pate - very similar color and texture. We especially like it hot, but it's still very good cold (put on a cracker, top with some cheese and roasted red pepper and broil - yum) or at room temperature. Great year-round, and especially at parties.

Categories     Spreads

Time 40m

Yield 8-10 serving(s)

Number Of Ingredients 9

3/4 lb sliced mushrooms (I use crimini, shiitake and white, mixed, but you can use your favorite or a combo)
1 cup slivered almonds (can also use your favorite nut, or a combination of nuts, such as 1/3 c almonds, 1/3 c walnuts, and)
1/4 cup butter (preferred) or 1/4 cup margarine
1 small onion, chopped
3 cloves garlic, minced
1/2 teaspoon salt
1 teaspoon thyme
fresh ground pepper, to taste
2 tablespoons oil (I've used extra virgin olive oil, salad oil, and white truffle infused oil - your preference)

Steps:

  • Spread nuts in shallow pan and toast in oven until lightly browned (note: if you're using a combination of nuts, toast each kind separately, as some take longer than others).
  • Melt butter or margarine in large frying pan/skilled on medium heat.
  • Add onions, garlic, mushrooms, salt, thyme, and pepper.
  • Cook, stirring occasionally,'til onion is soft and most of the juices have evaporated.
  • In food processor, whirl nuts to form paste.
  • Add oil and whirl until creamy.
  • Add mushroom mixture and whirl until smooth.
  • Can be served hot, cold, or even at room temperature with fresh bread or your favorite crackers.

INDIVIDUAL BEEF WELLINGTON WITH MUSHROOM PATE

Individual Beef Wellington with Mushroom Pate image

What a way to make an impressive dinner presentation! This recipe is wonderfully savory. We highly recommend trying Deb's Blue Ribbon Mushroom Pate with it... superb!

Provided by Deb Crane

Categories     Beef

Time 20m

Number Of Ingredients 5

2 filet mignons, about 1 inch thick
salt and pepper, to taste
1 can(s) small can of pate (i use my own mushroom pate)
1 pkg frozen puff pastry shells or dough
1 egg, beaten with 1 tablespoon milk or cream

Steps:

  • 1. Thaw puff pastry. Season filets with salt and pepper. On a board, roll out 2 puff pastry shells (or if using sheets, roll out the sheet) cutting a round big enough to encase the filets.
  • 2. Spread the pate on top of each filet. Wrap the filets in puff pastry, pate side down so the seams are on the bottom of each wrapped filet. Seal the edges with the egg mixture.
  • 3. Brush egg mixture all over pastry to give a glossy sheen. Roll out another sheet of pastry. Cut out shapes you desire and and decorate each wrapped filet. Brush again with egg mixture.
  • 4. Bake the wrapped filets on cookie sheet in a preheated 375 degree oven for about 20 minutes. The pastry will be golden brown. The filets will come out medium rare. If you are a well done lover, this will not work. Tenderloin is best under-cooked. It might get tough if you cook them till they are well done. NOTE: This is wonderful with my mushroom pate recipe. I will post that as well.

ITALIAN MUSHROOM PATE

Italian Mushroom Pate image

This is Italian not because I have used Italian mushrooms in the recipe. It was inspired by a fantastic mushroom pate I eat last summer while on holiday in Umbria. This is extremely easy to make I recommended serving it heaped on warm wholemeal toast. In my opinion this makes an Ideal starter, snack, lunch or even breakfast.

Provided by Tim Barker

Categories     Spreads

Time 30m

Yield 8 slices of toast, 4-6 serving(s)

Number Of Ingredients 8

300 g mushrooms (peeled and chopped)
1 medium onion, finely chopped
3 large garlic cloves
1/4 teaspoon chili powder
2 tablespoons olive oil
salt and pepper
1 teaspoon thyme (dried)
2 tablespoons breadcrumbs

Steps:

  • Add 1 tbls olive oil to a medium pan (not a non-stick frying pan)
  • Finely Chop the onion and fry with the crushed garlic until soft, just before they start to brown.
  • Add the chopped mushrooms, chili and thyme and continue cooking until the mushrooms are soft. Be carful not to overcook, as the mushrooms will make the mixture too liquid.
  • Try the mixture and add salt and pepper to taste.
  • Take off the heat, add the remaining olive oil and breadcrumbs and mix in a blender. I suggest not blending for too long and the pate will have a nice coarse texture.
  • Chill in the fridge until ready to serve.
  • Comment:. This is quite spicy so you may want to use less chili. Or perhaps more!

MUSHROOM, WALNUT AND ROSEMARY PATE

MUSHROOM, WALNUT AND ROSEMARY PATE image

Categories     Mushroom     Vegetarian

Number Of Ingredients 18

1 red onion, cut lengthwise into thin crescents
2 teaspoons minced garlic
1 cup sliced cremini mushrooms
1 cup sliced shiitaki mushrooms
½ ounce dried chanterelles, soaked in ½ cup boiling water for 30 minutes
1 cup red wine
1 teaspoon sea salt
2 teaspoons coarsely chopped fresh sage
1 teaspoon coarsely chopped fresh thyme
2 teaspoon coarsely chopped fresh rosemary
1 teaspoon ground nutmeg
½ teaspoon ground pepper
1 Tablespoon nutritional yeast
1 cup walnuts, toasted
1 Tablespoon tamari soy sauce
2 teaspoons balsamic vinegar
2 ½ cups water
2 teaspoons powdered agar agar, or 2 Tablespoons agar agar flakes

Steps:

  • 1. To prepare the toasted walnuts, first soak in two cups of warm water for 30 minutes. Drain. Place nuts on a baking sheet and bake in a 350° oven for 30 minutes, or until dry and light brown. Rotate every 10 minutes. Allow nuts to cool to room temperature before serving. 2. In a large nonstick skillet or sauté pan, cook the red onion, garlic, and mushrooms in the red wine, the chanterelle soaking liquid, and sea salt over medium heat, stirring often, until all the moisture has evaporated. Add the chanterelles and cook until heated through. Remove from the heat. Add the sage, thyme, rosemary, nutmeg, pepper, and yeast and stir well to incorporate. Transfer to a blender. Add the walnuts, tamari, vinegar, and 1½ cups of the water. Blend until smooth. 3. In a small saucepan, bring the remaining 1 cup water to a boil. Whisk in the agar agar and turn the heat to low. Continue whisking until the agar agar is thoroughly dissolved, about 5 to 7 minutes. Add to the mushroom mixture and blend until incorporated. 4. Test the paté to ensure that it sets up by refrigerating 1 tablespoonful for 10 minutes. If the test paté isn't firm by then, dissolve another 2 tsp agar agar powder or 1 Tbsp agar agar flakes in boiling water and add to the paté. Spread in an 8 x 5-inch loaf pan or 8-cup mold. Refrigerate for at least 2 hours. Unmold and cut into slices and serve.

MUSHROOM PATE

MUSHROOM PATE image

Categories     Mushroom     Appetizer     Sauté

Yield 2 pounds (large party)

Number Of Ingredients 19

Pate:
1 pound (16 oz) mushrooms(portabella, shitake & brown buttons), chopped
1/2 pound (8 oz) butter
1/2 onion, chopped
2 cloves garlic, chopped
1 small french roll
1/2 pound (8 oz) cream cheese
2 Tbsp fresh parsley, chopped
Croutes:
1 18 inch sour dough bagette
1 cup olive oil
salt, to taste
Pickled Red Onion Confit:
1 large red onion
3 Tbsp sugar
1/4 cup rice wine vinegar
pinch red pepper flakes
pich mustard seeds
2 garlic cloves

Steps:

  • Pate: Melt the butter in a heavy skillet. Sweat onions, garlic and mushrooms. Tear the roll into small pieces, add to mushrooms. Cool mixture. Blend with cream cheese and parsley. Season with salt & pepper. Croutes: Cut the bagette into thin slices on the diagonal. Toss with olive oil & salt. Bake in oven at 350 degrees until crisp, turning halfway through. Pickled Red Onion Confit: Thinly slice onion in cuisinart or mandoline. Heat all other ingredients (not onion) to boiling point in a saute pan. Add onions and stir constantly, until they turn pink. Cool. Remove garlic cloves. To serve: Spread mushroom pate on croute, garnish with pickled red onion confit.

Tips:

  • Soak the dried porcini mushrooms in hot water for at least 30 minutes until softened. Ensure you strain the liquid through a fine sieve and reserve it to add umami to the pâté later on.
  • Use a variety of mushrooms for a more complex flavor and texture - try using oyster, shiitake, and cremini mushrooms alongside the porcini.
  • Finely chop the mushrooms to ensure an even consistency in the pâté. A food processor can be used to achieve this if desired.
  • Sauté the mushrooms in butter until they are golden brown and caramelized. This step helps enhance their flavor and aroma.
  • Add a splash of white wine or brandy to deglaze the pan which is a technique used to dissolve browned bits stuck to the bottom of the pan, adding more flavor.
  • Use a combination of fresh herbs such as parsley, thyme, and rosemary for added flavor and aroma. Avoid using dried herbs as they tend to be less flavorful.
  • Season the pâté generously with salt and pepper. Taste and adjust the seasoning as needed.
  • Allow the pâté to cool completely before serving. This helps the flavors to meld and develop.
  • Serve the pâté with toast, crackers, or bread slices. You can also garnish it with fresh herbs or a drizzle of olive oil before serving.

Conclusion:

With its rich, earthy flavor and velvety smooth texture, this mushroom pâté is a delightful appetizer or snack that is perfect for any occasion. The umami-packed porcini mushrooms take center stage, while the addition of herbs and spices creates a symphony of flavors. Whether you're serving it at a party or enjoying it as a special treat, this mushroom pâté is sure to impress. So go ahead and indulge in this delectable creation, and savor every bite of its mushroomy goodness!
