- For the hamburger steaks: Whisk together the mustard, smoked paprika, egg, garlic, 1 teaspoon salt and 1/4 teaspoon pepper in a medium mixing bowl. Mix in the ground beef and breadcrumbs by hand, then form into 4 oval patties, about 1/2 inch thick.
- Set a large nonstick pan over medium-high heat and add the oil. Add the patties and brown on both sides, about 3 minutes per side. Transfer the patties to a plate; set aside.
- For the onion and mushroom gravy: Turn the heat down to medium and add the mushrooms and thyme. Cook until the mushrooms release their liquid and are browned, about 8 minutes. (The mushrooms might seem dry at first, but will eventually release liquid and add moisture to the pan.) Transfer the mushrooms to a plate; set aside.
- Melt the butter in the pan, add the onions and garlic and cook until translucent and lightly golden, about 10 minutes. Sprinkle in the flour and cook, stirring, until the butter and liquid are absorbed, about 1 minute. Pour the broth and Worcestershire into the pan and stir until the flour is dissolved.
- Turn the heat to high and bring to a boil. Stir the mushrooms back into the pan and nestle in the beef patties. Cover with a lid and reduce the heat to medium low. Let simmer until the sauce has thickened and a thermometer inserted into the patties registers 165 degrees F, about 10 minutes.

- Heat olive oil in large fry pan.
- Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
- Add garlic and cook 1 minute.
- In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
- With a slotted spoon, remove the veggies from the pan and set aside.
- Brown the chops about 2-3 minutes each side and remove from the pan.
- Return the veggies to the pan, add the chicken stock and place the chops on top, moving them around so they become immersed in the liquid.
- Bring to a boil then lower the heat. Cover and simmer 10-15 minutes until pork is tender.

- 1. In a bowl, mix beef ingredients. Make into 4 patties. Salt & pepper. In a large skillet, over medium heat - add oil. Once hot, add the beef patties. Fry on one side about 5 minutes, then turn and brown the other side, About 5 minutes. Remove from pan and set aside. Remove any excess fat from skillet - melt butter and add onions and mushrooms - salt & pepper - cook and stir until onions are tender and mushrooms have lost most of their moisture. - 1. Salt and pepper Brisket and brown on all sides in 2 tablespoons Olive Oil
- 2. Place in crock pot, add onion and garlic powder and the can of Guinness set on low for at least 8 hours
- 3. When done remove Brisket from crock pot and let rest on a plate saving the liquid in the pot for gravy.

SHEPHERD'S PIE WITH MUSHROOM ONION GRAVY

- Preheat oven to 375 degrees F.
- In a medium saucepan, cover potatoes and crushed garlic with enough water to cover by 1-inch. Add some salt and bring to a boil over high heat, then reduce to medium-high and cook until fork tender, about 15 minutes. Drain potatoes, return to pot, and mash together with 3 tablespoons of the butter and the heavy cream. Season with salt and pepper, to taste, and set aside.
- In a large pan on medium-high heat, combine 1 tablespoon butter and 1 tablespoon oil. When butter has melted, add beef, Worcestershire sauce, cayenne pepper and salt and pepper, to taste, and cook until meat is brown. Stir in tomato paste and saute for a few minutes. Add stock and bring to a simmer. Season and remove mixture to a bowl. In the same pan, add remaining butter and oil and saute onions until almost tender, then add red bell pepper, zucchini, carrots and paprika. Cook until tender, about 10 minutes. Remove from heat.
- To assemble, in a 9 by 12-inch baking dish layer half of beef, pressing down to pack in, then sprinkle the cheese on evenly. Pour the remaining half of the beef over the cheese and press down. Next, add the sauteed vegetables and top with the mashed potatoes, spreading out with a spatula or the back of a spoon to even out and to form decorative peaks and valleys. Sprinkle top with paprika and bake for 30 minutes or until edges on potatoes turn golden brown. Serve with Mushroom Onion Gravy.

- Pound the chicken breasts to an even thickness, about 1/2 inch thick. Best suggestion: place one breast at a time into a quart freezer bag, this keeps chicken juice from flying all over your kitchen!
- Cut green onions into 1 inch lengths at the green and thin slices in the white section. Clean and slice the mushrooms.
- Melt the butter in a large, deep-sided fry-pan. Saute the onions and mushrooms until just soft. Using a slotted spoon, remove vegetables and set aside.
- Combine flour, salt and pepper into a pie tin or similar. Rinse the prepared chicken breasts, then cover with flour. Place in the butter in the fry-pan. Cook on medium heat for about 5 minutes per side. They should be just done--juicy but no pink in the middle. Scoot chicken to side of pan, or remove if necessary.
- Add enough of the remaining flour mixture to soak up the drippings in the pan, and create a loose paste, use a whisk to stir and cook for 1 minute.
- Slowly add the chicken broth (from granules, a can or whatever, is fine!) Stir until well combined; add cream of mushroom soup and stir until well combined; return chicken to the pan. Simmer for about 5 minutes, until the gravy starts to thicken. Add a cold water/corn starch mixture if the gravy doesn't thicken. Return the vegatables to the gravy.
- Add the sour cream; cook, stiring constantly, until the sour cream is completely mixed in and warmed.
- Serving suggestion: serve over steamed rice.

- 1. In small bowl mix together the dehydrated onion flakes, beef bouillon granules, onion powder, paprika, celery seed and pepper. Set your dry onion soup mix aside.
- 2. In a large bowl crumble the ground beef then add the egg, panko bread crumbs and 2 Tablespoons of the dry onion soup mix. Combine and form into 4 patties. Sprinkle both sides of each patty with Montreal Steak Seasoning. I like to keep mine rather thick but if you prefer thin, then by all means make them thin.
- 3. Heat a skillet, large enough to comfortably hold the patties without crowding them, over medium heat. Lay the patties in and brown on one side then flip and brown on the other side. Cook for about 5 minutes then remove to a platter and keep warm. Internal temperature should be right around 155 .. they will continue to cook once removed and finish off later in the sauce.
- 4. Add the mushrooms to the skillet drippings and cook over medium until just about caramelized. Add the onions and cook just until tender. Remove to a bowl and keep warm.
- 5. Sprinkle the flour over the pan drippings and whisk in. NOTE: If the mushrooms absorbed all or most of the drippings add some butter. Your ratio should be about 4 Tbsp fat to 3 Tbsp flour - give or take what you prefer for thickness. Cook over low heat - whisking constantly - for about 5 minutes being careful not to let it burn. Add about 3/4 of the water and whisk until the mixture begins to thicken. Slowly add small amounts of more water to get the mixture to the right thickness for your personal taste. Be careful not to add too much or it will be really runny. Stir in the remaining soup mix then add in the mushrooms and onions.
- 6. Remove from heat and whisk in the sour cream. Lay the burger patties into the sauce and spoon some sauce over top of them. Cover and let it sit for about 3 minutes to warm the meat through. Serve sauce with patties and mashed potatoes and a vegie.
- 7. ***** NOTE ***** If you prefer you can mix the burger patties according to instructions then toss them on the grill for a great additional flavor. While they are grilling you can get the mushroom sauce ready as described.
