SPINACH AND MUSHROOM MEDLEY RECIPE - (4/5)

Spinach and Mushroom Medley Recipe - (4/5) image

Provided by Johanna

Number Of Ingredients 7

2 tsp olive oil
2 medium garlic cloves, minced
1/2 cup enoki mushrooms (or straw)
3/4 lb fresh spinach leaves, washed; stemmed; coarsely chopped (about 2 1/2 cups)
2 tbsp fresh lemon juice
1 pinch salt
1 pinch black pepper, freshly ground

Steps:

  • 1 Add oil to wok and heat over medium-high. Add garlic and stir-fry 10 seconds; add mushrooms and cook 2 minutes. 2 Add spinach, cover, and simmer for 2 to 3 minutes (spinach will begin to wilt). When ready to serve, season with lemon juice, salt, and pepper.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and ensure that you don't miss anything.
  • Choose the Right Mushrooms: Use a variety of mushrooms for a more flavorful dish. Cremini, shiitake, and oyster mushrooms are all good choices.
  • Don't Overcrowd the Pan: When cooking the mushrooms, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Use Fresh Spinach: Fresh spinach is best for this dish. If you don't have fresh spinach, you can use frozen spinach, but be sure to thaw it and squeeze out any excess water before using.
  • Add the Soy Sauce at the End: Soy sauce can burn easily, so add it towards the end of cooking.

Conclusion:

This mushroom medley with spinach, ginger, and soy is a delicious and healthy dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it can be easily customized to your liking. So next time you're looking for a quick and easy vegetarian meal, give this recipe a try!
