- Prepare beef and sauce: Slit tenderloin lengthwise, almost but not all the way through. Sprinkle with salt and 1/2 tsp. each pepper and thyme. - For the gnocchi, pare and steam the potatoes until they are fork tender. Puree.
- Blend the cheeses together.
- Blend the cheeses, potatoes and eggs together. Add the flour very slowly, mixing in after each addition. You want a very soft dough, not too stiff with flour or the gnocchi will be heavy and tough.
- Knead, creating a soft dough. Mold the dough into teaspoon size pieces. Place on a floured, inverted fork and press slightly. The tines will make ridges to help the sauce cling to the gnocchi.
- Start a large kettle of salted water to a rolling boil. While waiting on the water to boil, begin the mornay sauce.
- Heat the butter in a sauce pan and add the mushrooms, saute until most of the liquid has evaporated. Add the flour and cook 2 minutes over low heat, adding drops of chicken broth as needed to keep from being too dry while cooking. Stir in the chicken broth and half & half. Reduce heat and simmer until thickened. Stir in the cheese and simmer for 2 more minutes. Keep sauce warm over very, very low heat.
- Drop the gnocchi into the salted boiling water. Cook for 3 minutes after the dumplings begin floating. Drain and place in large serving bowl. Top and toss with Mornay Sauce.

- Combine yogurt, blue cheese, chives (if using) and dressing in a small bowl and blend with a fork to make a chunky sauce. Refrigerate it while you make the burgers; it will keep for up to 2 days.
- Place bulgur and 1/4 teaspoon salt in a small bowl. Pour the boiling water over, cover and set aside until the water is absorbed, about 20 minutes. Drain in a sieve, pressing out excess liquid.
- Meanwhile, spray a large nonstick skillet with cooking spray and turn on stove to medium heat. Add mushrooms, onion and remaining 1/2 teaspoon salt; cook, stirring, until the vegetables are softened, 8 to 10 minutes. Stir in vinegar and garlic. Immediately transfer the mixture to a plate and let cool to room temperature, about 30 minutes.
- Combine the vegetable mixture in a food processor; pulse briefly until coarsely chopped. PAN-SEARED MUSHROOM & GOAT CHEESE RAVIOLI WITH SPICY TOMATO SAUCE

- Heat 2 T olive oil in a medium sauce pan. Add the garlic and red pepper flakes and cook stirring constantly until light brown but be careful not to burn. Add the tomatoes, sugar and salt. Simmer 15 minutes. Add the basil. For the stuffing. Mix the cheeses and heavy cream and set aside. In a large sauté pan heat 2 T of oil. Add the mushrooms to the pan and cook until golden brown and all the juices have been absorbed. Add the 2 T. sherry and cook an additional 2 minutes until the sherry has been absorbed. Moisten edges with egg wash and fold over to make a triangle. Make sure edges are sealed completely. Continue until all won tons are filled. Keep wontons covered with a damp cloth. Add any leftover mushrooms to the sauce. Heat 2 T. of olive oil over medium heat in a large saute pan. Add the ravioli to the pan in batches. Cook until light golden brown on one side. Do not turn over. Add 1/2 cup water and cover. Cook 6-8 minutes until the water has evaporated. Transfer to serving platter and keep warm. Repeat. Pour sauce over ravioli and serve.

- 1. Preheat oven to 350°F.
- 2. Pound chicken breasts to flatten to about 1/4-inch thickness; set aside.
- 3. Bring water to boil in a saucepan. Remove pan from heat, add tomatoes to hot water, and let soak for 5 minutes. Remove tomatoes from water and pat dry with a paper towel, then finely chop the tomatoes.
- 4. Mix together the chopped tomatoes, goat cheese, rosemary and garlic. Spread equal amounts of the cheese mixture lengthwise over the center of each flattened chicken breast. Fold each chicken breast lengthwise overlapping left and right edges to cover filling in the center and tucking short ends inside. Secure with toothpicks.
- 5. Place egg in a shallow bowl, and beat well; set aside. Place breadcrumbs in a separate shallow bowl. Roll each rolled chicken breast in the beaten egg, then roll in the breadcrumbs until well coated.
- 6. Place coated chicken breasts in a baking dish. Pour melted butter over the chicken breasts. Tilt the baking dish from side to side to allow butter to coat the bottom of the baking dish (to help prevent the chicken from sticking to the pan).
- 7. Bake for 30 to 40 minutes, or until chicken is thoroughly done.
- 8. Make Mushroom-Wine Sauce while chicken is baking: Heat the olive oil in a skillet over medium heat. Add mushrooms and saute for 7 minutes. Add chicken broth and wine, and cook over medium-high heat for 5 minutes or unti liquid is reduced to about 1/3 cup. Remove pan from heat and stir in cold butter, stirring frequently until butter is melted.
- 9. To serve, remove toothpicks, and cut each chicken breast into 1/2-inch slices. Arrange chicken slices on a plate, and spoon Mushroom-Wine Sauce on top. Serve immediately.
