Steps:
- 1. Preheat oven to 350 degrees. Line a standard cookie sheet with foil. Place the pie shell on the cookie sheet. (The filling may overflow during baking)
- 2. In a large skillet on medium heat, melt the butter. Add the chopped onion and saute for 2-3 minutes. Add the mushrooms and chopped broccoli. Saute 7-10 minutes until tender. Set aside.
- 3. In a large bowl, add the heavy cream, eggs and cheese. Mix thoroughly. Add a pinch of nutmeg. You may also want to add 1/8 tsp black pepper and a little salt. Mix in the sauteed vegetables. Tips:
- To ensure a flaky crust, use cold butter and work it into the flour quickly to avoid overworking the dough.
- Blind bake the quiche crust for 10-12 minutes before filling it to prevent a soggy bottom.
- Use a variety of mushrooms for a more flavorful quiche. Some good options include shiitake, oyster, and cremini mushrooms.
- Sauté the mushrooms and broccoli before adding them to the quiche filling to enhance their flavor.
- Use a combination of grated and crumbled cheese for a richer, more complex flavor.
- Season the quiche filling generously with salt and pepper, and add a pinch of nutmeg for a warm, subtle flavor.
- Bake the quiche until the filling is set and the crust is golden brown, about 45-50 minutes.
- Let the quiche cool slightly before slicing and serving to allow the filling to firm up.
