1 tbsp olive oil
1 Red onion
3 cloves ginger
1 inch piece of fresh garlic
4 tsp Coriander powder
1 tsp Turmeric powder
1 tsp Chili powder
2 tsp Smoked paprika
2 tbsp Tomato paste
1/2 cup Coconut milk (I used chaokoh)

Steps:

  • First off, peel the red onion, garlic cloves, and fresh ginger.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients prepped and measured. This will help you stay organized and avoid scrambling while you're cooking.
  • Use fresh ingredients: Fresh mushrooms and okra will give your curry the best flavor. If you can't find fresh okra, you can use frozen okra, but be sure to thaw it before cooking.
  • Don't overcrowd the pan: When you're cooking the mushrooms and okra, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Simmer the curry: Once you've added all the ingredients to the pot, bring it to a boil, then reduce the heat to low and simmer for at least 15 minutes. This will allow the flavors to meld together.
  • Serve with rice or bread: Mushroom and okra curry is traditionally served with rice or bread. You can also serve it with naan or roti.
