Time 1h40m

Yield 4

Number Of Ingredients 6

1 pound (16 ounces) pork tenderloin
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
4 ounces (1/2 cup) ground chorizo sausage
1 1/2 tablespoons olive oil
1/4 cup ginger lime marmalade or your favorite marmalade

  • Season the tenderloin on both sides with salt and pepper. Place the chorizo down the center of the tenderloin, patting it down, and leaving about 2 inches on all sides of the chorizo. Roll up the tenderloin. Truss the tenderloin with kitchen string.
  • Heat a large sauté pan to high heat. Pour in the oil. Place the trussed tenderloin in the hot oil. Sear the tenderloin on all sides evenly, until the bottom has a browned crust.
  • Slide the skillet into the hot oven. Bake for 12-16 minutes or until an internal temperature of 160°F has been achieved.
  • Remove trussing; slice the tenderloin on a bias. Place the pieces on a platter. Drizzle the tenderloin with marmalade. Serve immediately.

MUSHROOM-STUFFED PORK TENDERLOIN

Provided by Food Network Kitchen

Time 1h10m

Yield 6 servings

Number Of Ingredients 9

5 tablespoons extra-virgin olive oil, plus more for brushing
4 slices bacon, chopped
8 ounces cremini mushrooms, thinly sliced
Kosher salt and freshly ground pepper
1 clove garlic, finely chopped
1 tablespoon breadcrumbs
1/2 cup chopped fresh parsley
2 pork tenderloins (2 to 2 1/2 pounds total), trimmed
1/2 teaspoon grated lemon zest

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the bacon and cook until crisp, about 8 minutes. Add the mushrooms, 1/2 teaspoon salt, and pepper to taste; cook until the mushrooms are soft, about 4 minutes. Add the garlic and cook 1 minute. Remove from the heat and stir in the breadcrumbs and all but 2 tablespoons parsley. Let cool.
  • Soak 10 to 12 toothpicks in water to prevent them from burning. Rinse the pork and pat dry. Butterfly the pork: Make a 1-inch-deep incision down the length of each tenderloin; do not cut all the way through. Open the meat like a book so the tenderloins lie flat.
  • Cover the pork with plastic wrap; pound with the flat side of a meat mallet until about 1/2 inch thick, starting from the middle and working outward. Spread the mushroom mixture over the 2 tenderloins. Starting with a long side, tightly roll up each tenderloin. Secure the seams with the toothpicks.
  • Preheat a grill to medium high; brush the grates with olive oil. Brush the pork rolls with olive oil and season with salt and pepper. Grill, turning, until a thermometer inserted into the center of the pork registers 140 degrees F, 25 to 30 minutes. Transfer to a cutting board to rest, about 10 minutes.
  • Mix the remaining 3 tablespoons olive oil and 2 tablespoons parsley, the lemon zest, and salt and pepper to taste in a bowl. Remove the toothpicks and slice the pork rolls. Top with parsley oil.

CHORIZO-STUFFED PORK TENDERLOIN

Chorizo-Stuffed Pork Tenderloin image

I have been making this recipe for a long time. I'm not sure where I got it, but the reaction of my family when they tasted this recipe told me it was a "keeper". They absolutely loved this pork tenderloin, and said it was their favorite dinner! It is mine too, so I hope you enjoy it.

Categories     Pork

Number Of Ingredients 9

10 ounce(s) pkg frozen spinach, thawed and squeezed dry
1/2 cup(s) shredded cheddar cheese
2-4 ounce(s) spanish chorizo, (see note) or hard salami, finely chopped
1/2 teaspoon(s) salt, divided
3 clove(s) garlic, minced
2 tablespoon(s) olive oil, divided
1-1/4 pound(s) pork tenderloin
1/4 teaspoon(s) black pepper
* NOTE: SPANISH CHORIZO IS A SEASONED, FULLY COOKED SMOKE PORK SAUSAGE. FIND IT NEAR OTHER CURED SASAGES IN SPERMARKETS, SPECIALTY STORES OR ONLINE AT TIENDA.COM

Steps:

  • Preheat oven to 450 degrees
  • Combine spinach, cheese, chorizo (or salami) and 1/4 teaspoon salt in a bowl.
  • In another bowl, combine garlic, 1 tablespoon oil and the remaining 1/4 teaspoon salt; set aside
  • To butterfly the tenderloin, lay it on a large cutting board. Holding the knife blade flat and parallel to the board, make a lengthwise cut through the center of the meat, stopping short of the opposite edge so the tenderloin remains in one piece. Open as you would a book.
  • Spread the spinach mixture in the center of the pork, leaving a 1-inch boarder all around. Starting at a long side, roll up pork to enclose the filling. Fold in the short sides as you roll, to keep filling from falling out. Tie kitchen string firmly lengthwise around the roast to secure the two ends, then tie it crosswise at 2-inch intervals.
  • Heat remaining 1 tablespoon oil in a large ovenproof skillet over medium-high heat. Reduce the heat to medium and brown pork on all sides, 4-6 minutes total. Brush top with reserved garlic mixture, season with pepper. Transfer pan to the oven and roast pork until an instant-read thermometer inserted into the thickest part of pork registers 145 degrees...15 to 20 minutes. Let rest on a clean cutting board for 5 minutes before slicing.

Time 1h

Yield 5

Number Of Ingredients 14

1 tablespoon extra-virgin olive oil, or as needed
10 white mushrooms, minced
1 shallot, minced
½ teaspoon dried thyme
½ teaspoon garlic powder
½ teaspoon dried sage
½ teaspoon ground black pepper
¼ teaspoon salt
¼ cup chopped fresh parsley
2 cups fresh spinach
1 teaspoon Dijon mustard
1 (2 pound) pork tenderloin, butterflied and pounded flat
4 slices prosciutto
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 1 teaspoon olive oil in a skillet over medium heat; cook and stir mushrooms, shallot, thyme, garlic powder, sage, black pepper, and salt in the hot oil until liquid has evaporated and mushrooms and shallots are softened, 5 to 10 minutes. Add parsley; cook and stir for 1 minute. Mix in spinach; cook and stir until spinach is wilted, about 5 minutes. Stir in mustard. Remove from heat.
  • Place pork tenderloin on a work surface; lay prosciutto atop tenderloin. Spread mushroom-spinach mixture over prosciutto, leaving 1/2-inch border on all sides. Tightly roll tenderloin around the filling and tie together with kitchen string to keep closed.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat; place rolled tenderloin in the hot oil. Sear until all sides are golden brown, about 10 minutes. Transfer seared tenderloin to a 9x13-inch casserole dish.
  • Bake in the preheated oven until pork is no longer pink in the center, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

Tips:

  • To ensure even cooking, make sure the pork tenderloin is evenly thick throughout. If necessary, butterfly the tenderloin to create a more uniform thickness.
  • Don't overstuff the tenderloin, as this can make it difficult to roll and secure.
  • If you don't have a meat mallet, you can use a rolling pin to flatten the tenderloin.
  • To prevent the filling from leaking out, make sure to seal the edges of the tenderloin securely with toothpicks or kitchen twine.
  • When searing the tenderloin, be sure to do so over high heat to create a nice crust. This will help to keep the juices in the meat.
  • Once the tenderloin is seared, reduce the heat to medium-low and cook until the internal temperature reaches 145 degrees Fahrenheit for medium-rare, or 160 degrees Fahrenheit for medium.
  • Let the tenderloin rest for 10 minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Mushroom and chorizo stuffed pork tenderloin is a delicious and elegant dish that is perfect for a special occasion. It is relatively easy to make, but it is sure to impress your guests. With its savory filling and tender meat, this dish is sure to be a hit. So next time you're looking for a special meal to make, give this recipe a try. You won't be disappointed!
