1 medium onion, chopped
1 stalk celery, chopped
2 carrots, chopped
¾ cup pearl barley
¾ cup dry brown lentils
⅓ cup dried porcini mushrooms, rinsed
2 quarts low-sodium beef broth
¼ teaspoon dried thyme
1 teaspoon dried parsley
¼ teaspoon freshly ground black pepper
1 bay leaf
4 cups sliced button mushrooms
1 tablespoon dry sherry

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onion; cook and stir until onions are limp, but not brown, about 5 minutes. Mix in the celery and carrot; cook for another 5 minutes. Stir in the barley and lentils so they are coated with oil, continue to cook and stir until lightly toasted.
  • Pour in the beef broth and season with thyme, parsley, pepper and the bay leaf. Bring to a boil. Add the porcini mushrooms, cover and simmer for 25 minutes over low heat. 3 cups boiling-hot water plus 8 cups cold water
1 pound cross-cut beef short ribs or flanken
2 1/2 teaspoons salt
1/2 teaspoon black pepper
1 large onion, chopped (2 cups)
2 carrots, cut into 1/4-inch dice
2 celery ribs, cut into 1/4-inch dice
1/2 pound fresh cremini mushrooms, trimmed and quartered
2 tablespoons vegetable oil
1/2 cup pearl barley
1/4 cup chopped fresh dill

Steps:

  • Soak dried mushrooms in boiling-hot water in a bowl until softened, about 20 minutes. Drain in a paper-towel-lined sieve set over a bowl and reserve soaking liquid. Rinse mushrooms, pat dry, and finely chop.
  • Bring soaked mushrooms, soaking liquid, ribs, salt, pepper, and remaining 8 cups water to a boil in a 6- to 8-quart pot, then reduce heat and simmer, partially covered, skimming foam, until meat is just tender, about 1 hour. Transfer ribs with a slotted spoon to a cutting board to cool, reserving broth.
  • While meat simmers, cook onion, carrots, celery, and creminis in oil in a 12-inch heavy skillet over moderate heat, stirring occasionally, until well browned, 15 to 20 minutes. Stir in barley and cook, stirring, 1 minute.

Steps:

  • Place the dried mushrooms in a medium bowl and cover with the boiling water. Let soak until well hydrated and softened, about 15 minutes. Strain through a fine-mesh sieve, reserving the liquid. Roughly chop the porcini and set aside.
  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the carrots, onion, cremini mushrooms if using, 1/4 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until all vegetables are tender and mushrooms are golden brown, 8 to 10 minutes.
  • Add the garlic, 1 tablespoon of the vinegar and the tomato paste to the pot, then continue to cook, scraping up any brown bits from the bottom of the pan with a wooden spoon. Sprinkle the flour and thyme evenly over the vegetables and cook, stirring, until flour is dissolved and no longer raw, about 1 minute. Stir in the barley, broth, reserved mushroom liquid and porcini, 1/2 teaspoon salt and several grinds of pepper. 1/2 cup dry red wine
4 cups beef stock or chicken stock
1 cup pearled barley
1 cup unsweetened oat milk
Fresh dill, for garnish

Steps:

  • Place a large heavy-bottomed Dutch oven over medium heat. Add the olive oil and heat to shimmering, then add the onion, garlic, and a pinch of salt. Cook until aromatic and just starting to soften, about 2 minutes.
  • Add the mushrooms and rosemary and cook, stirring occasionally, until the mushrooms have given up most of their liquid and are beginning to brown, about 5 minutes.
  • Add the flour and cook for 1 minute, stirring constantly. Add the red wine and stock to deglaze the pan, scraping with a wooden spoon to loosen the browned bits on the bottom. 1 1/4 lbs shin beef (bone in, about 1-1/4 lb.)
1 medium onion, halved with peel
3 quarts water
1 1/2 cups chopped onions
1 1/2 cups diced carrots
1 cup chopped celery
2 garlic cloves, crushed through press
1 lb fresh mushrooms, chopped
1 cup coarsely chopped canned tomato
1/4 cup chopped fresh Italian parsley
1 tablespoon salt (or to taste)
1/2 teaspoon fresh ground pepper
2 allspice berries
1 bay leaf
1/2 cup pearl barley
1 cup chopped fresh spinach leaves

Steps:

  • Heat 1 T. oil in large Dutch oven over low heat. Add meat and halved onion and brown on all sides, about 10 minutes. Pour in the water. Simmer, partially covered, about 2 hours; skim surface as needed. Remove meat to plate. Strain stock through sieve lined with dampened paper towel. (Soup can be prepared up this point 1 day in advance.) Remove bone and gristle from meat; shred meat and add to strained stock.
  • Heat remaining 1 T. oil in Dutch oven over low heat. Add chopped onions, carrots, and celery and stir to coat with oil. Cook covered, stirring occasionally, until tender, about 15 minutes; do not allow to brown. Stir in garlic, increase heat to medium, and cook 1 minute. Stir in mushrooms and cook 5 minutes longer.
  • Add stock with beef, tomatoes, parsley, salt, pepper, allspice and bay leaf. Heat to boiling and stir in barley. Reduce heat and simmer, partially covered, until barley is tender, about 45 minutes. Stir spinach into soup for last 5 minutes of cooking. Taste and adjust seasonings. Serve hot.

When I first heard about Ari Weinzweig's delicatessen in Ann Arbor, Michigan, I couldn't believe it. A deli in the home of my alma mater. It's not really a deli but more of an international food emporium like New York's Zabar's with a definite Jewish touch. Mr. Weinzweig, a drop-out Ph.D. candidate, has taken an academic and appetizing interest in updating Jewish recipes like mushroom and barley soup, going back in history to the nineteenth-century Eastern European version similar to that served at New York's Second Avenue Deli.

2 tablespoons margarine
1 large onion, thinly sliced
2 ribs celery with leaves, diced
1/4 cup parsley
1 carrot, peeled and sliced
3 cloves garlic, chopped
1 pound fresh porcini or other mushrooms
1 tablespoon flour
2 quarts beef broth or water
1 cup whole barley
2 teaspoons salt

Steps:

  • 1. Soak the mushrooms in enough hot water to cover for a half hour. Strain through a filter. Reserve the water.
  • 2. Coarsely chop the dried mushrooms.
  • 3. Melt the margarine in a stockpot and sauté the onion, celery, 2 tablespoons of the parsley, carrot, garlic, and fresh mushrooms until soft, about 5 minutes.
  • 4. Lower the heat and add the flour, stirring every 30 seconds for about 5 minutes or until thick.
  • 5. In a soup pot heat the broth or water. Add a cup of mushroom mixture at a time to the pot, stirring.
  • 6. Turn the heat to high, and add the reserved mushroom water and barley. Stir well and add salt to taste.
  • 7. Simmer, covered, for about an hour or until the barley is tender and the soup is thickened, stirring often.
  • 8. Add additional chopped parsley, mix thoroughly, and adjust seasonings.

1/4 cup dried funghi porcini, stems discarded
1/4 cup dried shiitake mushroom, stems discarded
1 lb beef, cubed
1 lb ground beef or 1 lb ground turkey
1 teaspoon salt
1 teaspoon pepper
1 chipotle chile in adobo, diced
6 cups water, if possible bottled or filtered
2 tablespoons Worcestershire sauce
1 tablespoon beef base
3 ounces tomato paste
1 teaspoon dried oregano
1 fresh bay leaf
1/2 cup barley

Steps:

  • Soak mushrooms in hot water to cover set aside.
  • In a large heavy bottom pot heat oil and saute onions, garlic, celery and carrots to slightly wilted.
  • Season beef cubes generously with salt and pepper then add to onion mixture to brown.
  • Remove mushrooms and rough cut reserve the strained liquid.
  • Add ground meat, chipotle pepper, and chopped mushrooms to pot and brown.
  • Add to the 6 cups of water strained liquid from mushrooms, Worcestershire sauce, beef base, and tomato paste stir to blend and add to pot along with the oregano and bay leaves.
  • Bring to a boil and simmer for 30 minutes.
  • Add barley and simmer an hour.

Steps:

  • Separate mushroom stems from caps. Slice caps and set aside. Chop stems. Melt butter in heavy large saucepan over medium-high heat. Add mushroom stems, onion and leek and sauté until tender, about 8 minutes. Mix in chicken broth, potatoes, carrot, barley and bay leaves. Cover mixture and simmer 30 minutes. Uncover soup, add mushroom caps and continue simmering until vegetables are very tender, about 25 minutes. Season soup to taste with salt and pepper and serve.

Belarusian cuisine has much in common with that of other countries in the region. This hearty soup is sure to please. I've expanded a bit on the instructions, based on my experience with these ingredients.

1/2 cup pearl barley
1/2 lb fresh mushrooms or 1/4 cup dried mushroom
1 small onion, chopped
1 tablespoon butter
1 lb beef (plate)
1/2 cup sour cream
salt

Steps:

  • Wash barley in hot water and soak overnight in two cups of water.
  • If using dried mushrooms, wash, break up any large pieces, and cover with two cups of hot water, soaking for at least two hours, and overnight if you can.
  • Drain the barley, put in pot, and cover with four cups fresh water.
  • Drain the mushrooms, saving the soaking liquid .If using fresh mushrooms, slice.
  • Melt butter in the saucepan, add the onion and mushrooms and saute until the onion is soft, about 10 minutes.
  • Add all of this to the pot, along with the meat and some salt. Bring to a boil, reduce to a simmer, and cook until the barley is soft and the meat is done, about 1 hour. I would add the mushroom soaking liquid - you need to make sure you don't pour in the grit that settles to the bottom. Watch the pot, as you may need additional water, especially if you used fresh mushrooms and don't have the soaking liquid.
  • Remove the beef, cube, and return to the pot.
  • Remove from the heat and stir in the sour cream, if desired. Taste for salt.
  • Note: The recipe does not call for it, but I would add one or two bay leaves, and 4 or 5 whole peppercorns or some ground black pepper to any soup of this type.

SAUERKRAUT, MUSHROOM, AND BARLEY SOUP RECIPE

2 quarts water
12 ounces mushrooms washed well, stems trimmed, and thinly sliced
1 can sauerkraut - (14 oz)
2 cans sauerkraut juice - (8 oz ea)
1/3 cup barley
1/2 cup finely-minced onion
2 tablespoons safflower oil
2 tablespoons unbleached flour
1 1/2 cups Vegan Dumplings (see recipe), precooked
Salt to taste
Freshly-ground black pepper to taste
Unbleached cane sugar to taste

Steps:

  • In a large pot, combine the water, mushrooms, sauerkraut, sauerkraut juice, and barley, and bring to a boil. Reduce heat to low and simmer for 20 minutes. Meanwhile, in a small non-stick skillet, saute the onion in the safflower oil for 2 to 3 minutes or until softened. Add the flour and stir well to combine. Cook the onion-flour mixture an additional 2 to 3 minutes, while stirring constantly, until the color of the mixture darkens a bit. Add a little of the simmering soup to the skillet, stir well to incorporate it with the onion-flour mixture, and then stir the entire contents of the skillet into the simmering soup. Cook the soup an additional 30 minutes or until the barley is tender. Add the Vegan Dumplings and season to taste with a little salt, pepper, and sugar. Simmer the soup an additional 5 minutes to allow the flavors to blend. Taste and adjust seasonings, if needed. Garnish individual servings with a sprinkle of nutritional yeast flakes, if desired. This recipe yields 6 to 8 servings.

2 leeks, finely sliced
1 garlic clove, chopped
1 teaspoon gingerroot, grated
1 stalk celery, diced

1 liter chicken stock or 1 liter vegetable stock

1/2 cup pearl barley

Steps:

  • Soak dried mushrooms in 1 1/2 cups boiling water for 15 minutes.
  • Drain but reserve the liquid.
  • Discard mushroom stems and thinly slice the cups.
  • Heat a small amount of oil in saucepan.
  • Over medium heat saute the leeks, garlic, ginger, celeray and carrots for 5 minutes until leek is softened.
  • Add stock, soy sauce and barley, sliced mushrooms and reserved mushroom liquid.
  • Boil gently for 30 minutes until the barley is plump.

10 dried mushrooms
5 cups chicken broth, divided
4 cups water
2 potatoes, cubed
2 carrots, chopped
¼ cup pearl barley, or more to taste
ground black pepper to taste
2 tablespoons vegetable oil
2 onions, chopped
1 clove garlic, minced, or more to taste
1 tablespoon all-purpose flour

Steps:

  • Rinse mushrooms and place in a bowl with enough cold water to cover; soak until mushrooms are re-hydrated, about 15 minutes. Drain and slice mushrooms.
  • Combine 4 cups chicken broth, water, potatoes, carrots, mushrooms, barley, and black pepper in a pot; bring to a boil, reduce heat to low, cover the pot, and simmer until barley is cooked, about 1 hour.
  • Heat oil in a skillet over medium-high heat; saute onion and garlic in hot oil until golden, 3 to 5 minutes. Add onion and garlic to barley mixture, bring soup again to a simmer, cover the pot, and cook until flavors blend, about 30 minutes.

1.5 cups pearl barley
2.5 quarts chicken or beef stock
2 cups Burgandy wine

3 Tbls tomato paste
1 cup enoki mushrooms
2 tsp balsamic vinegar
Kosher salt and fresh ground pepper

Steps:

  • Heat a stockpot over medium-high heat. Add olive oil and garlic. Stir quickly, then add the onions, carrots, and celery. Saute for 5 minutes. Add portabellas, shiitakes, and chanterelles. Saute for 5 minutes more. Add barley, stock, wine, oregano, basil and tomatoe paste. Stir to combine. Bring to boil. Reduce heat to medium and simmer 45 minutes to 1 hour. Remove from heat. 2 tablespoons margarine
1 large onion, thinly sliced
2 ribs celery with leaves, diced
1/4 cup parsley
1 carrot, peeled and sliced
3 cloves garlic, chopped
1 pound fresh porcini or other mushrooms
1 tablespoon flour
2 quarts beef broth or water
1 cup whole barley
2 teaspoons salt

  • 1. Soak the mushrooms in enough hot water to cover for a half hour. Strain through a filter. Reserve the water. 2. Coarsely chop the dried mushrooms. 3. Melt the margarine in a stockpot and sauté the onion, celery, 2 tablespoons of the parsley, carrot, garlic, and fresh mushrooms until soft, about 5 minutes. 4. Lower the heat and add the flour, stirring every 30 seconds for about 5 minutes or until thick. 5. In a soup pot heat the broth or water. Add a cup of mushroom mixture at a time to the pot, stirring. 6. Turn the heat to high, and add the reserved mushroom water and barley. Stir well and add salt to taste. 7. Simmer, covered, for about an hour or until the barley is tender and the soup is thickened, stirring often. 8. Add additional chopped parsley, mix thoroughly, and adjust seasonings.
