¼ teaspoon ground black pepper

Steps:

  • Fill a large pot with water and 1 tablespoon oil; bring to a rolling boil. Stir in tortellini and cook until they float to the top and the filling is hot, about 7 minutes. Drain and transfer to a large bowl.

1 pound button mushrooms, thinly sliced
1 cup finely chopped yellow onion
3 tablespoons minced garlic
1/2 cup all-purpose flour
7 cups milk
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated nutmeg
1 pound spinach, stemmed, washed, blanched and roughly chopped
3 cups grated Parmesan
2 tablespoons olive oil, plus more for coating casserole dish
2 pounds boneless skinless chicken breast
1 tablespoon Essence, recipe follows
1 pound oven-ready lasagna sheets
1 tablespoon butter, cut into 8 pieces
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the mushrooms and cook, stirring often until the mushrooms are browned and most of the liquid has evaporated, about 5 to 7 minutes. Add the onions and garlic to the pan and saute until soft and translucent, 3 to 4 minutes. Add the flour and cook, stirring with a wooden spoon, to make a light roux, about 2 minutes. Whisking constantly, slowly add the milk and continue to cook, stirring occasionally until thickened, 5 minutes. Add 1 1/2 teaspoons of the salt, pepper, nutmeg, spinach and 1 1/2 cups of the Parmesan and cook, stirring, until thickened, about 2 minutes. Remove from the heat. Place a piece of plastic wrap directly on the surface of the bechamel sauce until ready to assemble the lasagna.
  • Set a large, 12-inch saute pan over medium heat and add the olive oil. Season the chicken with the Essence and remaining 1/2 teaspoon of kosher salt and place in the hot pan. Sear the chicken, stirring occasionally, until golden brown and cooked through, about 4 to 5 minutes. Transfer to a plate to cool and set aside. When cool, cut into bite size pieces.
  • Preheat the oven to 375 degrees F.
  • Coat a 9 by 13 by 3-inch casserole with olive oil, and spread about 1/2 cup of the bechamel sauce on the bottom of the dish. Lay 3 sheets of pasta across the bottom of the dish and spread 3/4 cup of the bechamel sauce over the pasta. Sprinkle 1/4 of the chicken over the bechamel sauce, then sprinkle with 1/4 cup of the remaining Parmesan. Lay another 3 sheets of pasta over the chicken. Repeat 2 additional times with the remaining bechamel sauce, chicken, Parmesan, and pasta, ending with a layer of pasta covered with bechamel sauce. Sprinkle the remaining 1/2 cup of Parmesan over the bechamel sauce and scatter the butter pieces over the top. Place the casserole on a parchment paper-lined baking sheet and bake, uncovered, until bubbly and well browned, about 45 minutes. Remove from the oven and allow to cool for at least 20 minutes before serving.

1 pint heavy whipping cream
1 ¼ cups butter, divided
¾ cup grated Romano cheese

1 large onion, chopped
8 ounces diced mushrooms

2 cups mushrooms, sliced
1/4 cup butter
1 shallot, chopped
2 garlic cloves, minced
1/4 teaspoon black pepper
1/4 teaspoon sea salt
1/8 cup white wine
1/2 cup ricotta cheese
1/2 cup grated mozzarella cheese
2 tablespoons grated parmesan cheese
1 package wonton wrapper
water
cornmeal
1 cup cream or 1 cup half-and-half
1/2 cup parmesan cheese
1/2 teaspoon garlic powder
salt and pepper

Steps:

  • Saute shallot and mushrooms in butter.
  • Add garlic, white wine, salt and pepper and reduce for a couple of minutes.
  • Cool and add cheeses.
  • Pulse a few times in food processer.
  • Wet edges of one wonton wrapper.
  • Put a spoonful of filling in center and top with another wonton wrapper. If you need alot, make a triangle with one wrapper and you will end up with about 50 ravioli.
  • Press edges together, trying not to allow any air to remain inside ravioli. I sometimes cut with a 3" round cookie cutter, or you can leave it square.
  • Place on tray sprinkled with corn meal and allow to dry for an hour before dropping in boiling salted water.
  • When ravioli floats it is done. Takes about 3 minutes.
  • In the meantime, Heat up Alfredo Sauce ingredients until cheese melts. I also add any remaining mushroom filling to sauce.
  • Serve and enjoy.

I fell in love with the alfredo artichoke pizza at Artichoke downtown and wanted to make a less expensive and less rich version at home since I like experimenting with tomato-free pizzas. I like using Recipe #453818 or Recipe #31072 to make little 8" crusts but I made a 12" version of the Sicilian dough with this pizza to have dinner ready for 2 days. I made some alfredo sauce with soymilk, dairy butter, and a packet of Simply Organic alfredo sauce mix and used that along with some fresh mushrooms and canned artichoke pieces that I rinsed. Just use whatever you have on hand or floats your boat, it'll be delicious no matter what! All the following measurements are completely approximate; it's more to give you an idea of what to use on your pizza to get this exquisite flavor that is a different kind of blonde/white pizza.

12 inches pizza crusts (storebought or homemade)
3/4 cup alfredo sauce, whatever kind you like
2 -3 cups spinach, chopped in a food processor

1/2 cup artichoke, pieces
1/2 cup mozzarella cheese, shredded

2 medium precooked prepared pizza crust
1 tablespoon olive oil
1 large boneless skinless chicken breast
seasoning salt, to taste
minced dried garlic, to taste
dried basil, to taste
1/2-1 cup prepared alfredo sauce, separated
1 cup chopped fresh spinach, separated
8 -12 ounces shredded mozzarella cheese
1 (8 ounce) package washed and sliced mushrooms

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In small skillet, heat oil while cutting up chicken breast into small pieces. Then, saute chicken in oil, and season with salt, minced garlic and dried basil. When chicken is fully cooked and no longer pink, remove from skillet and saute sliced mushrooms in oil; season mushrooms with minced garlic and seasoned salt as well.

1/2 lb dried lasagna noodle
1 large garlic clove, minced
2 cups whole milk
5 tablespoons unsalted butter, divided

3/4 lb cremini mushrooms or 3/4 lb portabella mushroom
3/4 cup freshly grated parmesan cheese
1/2 lb fresh spinach

Steps:

  • Preheat your oven to 375°F Bring a large, wide pot of water to boil with salt and a splash of oil, that will help keep your noodles from sticking together as they drain. Add the lasagna noodles and cook for 10 minutes. Drain and set aside.
  • Make béchamel: Bring the milk and garlic to simmer in a saucepan, or heat it in your microwave, and set it aside. Melt 4 tablespoons butter in a large saucepan. Add the flour and cook for one minute over low heat, stirring constantly with a whisk or wooden spoon. Pour in the hot milk, a little at a time at first and stirring until combined. Continue adding a few tablespoons at a tim until you've added half of it, then you can add the second half all at once, along with 1/2 teaspoon table salt, the pepper, and nutmeg. Cook over medium-low heat, stirring or whisking frequently, for 3 to 5 minutes, or until thick. Set aside.
  • Prepare vegtables: Discard portobello mushroom stems and/or trim the ends of the cremini stems. Slice mushrooms 1/4-inch thick. Heat 1 tablespoon olive oil and 1 tablespoons butter over medium in the bottom of the large, wide pot you used to cook the noodles earlier, or in a large sauté pan. Cook the mushrooms with a pinch of salt for about 5 minutes, or until they are tender and release some of their juices, tossing to make sure they cook evenly. Add the spinach and cook until wilted.
  • Assemble lasagna: Spread some of the sauce in the bottom of 9x9 baking dish (if you'd like to freeze or give this dish as a gift, remember to use a foil pan). I was looking to add my veggies to a pasta dish and needed to use up my heavy cream and decided to experiment with this recipe. It came out pretty good, hope you like it. If you think this is too much food, you can alter the dimensions. I always like to double my recipes so I have leftovers

20 ounces cheese tortellini (Costco brand)
10 ounces frozen chopped broccoli
10 ounces sliced portabello mushrooms
1/4 cup butter
2 1/2 cups heavy cream
2 tablespoons chopped parsley
1 teaspoon ground black pepper
1 cup shredded asiago cheese
1 cup grated parmesan cheese
6 minced garlic cloves

Steps:

  • Boil water and cook tortellini according to package. Add frozen brocolli to the boiling water when you add pasta and cook until pasta is ready.
  • In another non-stick pan, use olive oil cooking spray and add mushrooms and cook until soft.
  • Add mushrooms to the tortellini and brocolli and top with sauce below.
  • For sauce:.
  • Melt butter in a large pan, saute garlic until golden (do not let it brown).
  • Add cream, parsley & black pepper.
  • Stir with a wisk to blend well, cook until the sauce starts to thicken.
  • Gradually add cheese stirring until cheese is melted.
  • Remove from heat.
  • Serve over pasta and top with grated cheese of your choice (pecorino romano & parmesan work very well with this dish).

1 (12 ounce) package fettuccine
1 (6 ounce) package portabella mushrooms
1 cup heavy whipping cream
1 cup milk
1/2 cup butter
1 cup parmesan cheese
1 teaspoon fresh coarse ground black pepper
1/2 teaspoon salt
3 garlic cloves, minced
2 tablespoons flat-leaf Italian parsley (chopped)

Steps:

  • Cook pasta according to package directions; drain; set aside.
  • Remove brown gills from undersides of mushroom caps using a spoon, and discard gills. Chop mushrooms.
  • Melt butter in a large saucepan over medium heat; add mushrooms and garlic. Saute 5-6 minutes or until tender. Stir in cream and milk. Bring to a boil over medium-high heat; reduce heat, and simmer, whisking constantly, 10 minutes. Stir in cheese, pepper, and salt; stir until cheese melts and mixture thickens. Stir in parsley. Serve over hot cooked pasta.

1 chicken breast, skined and cut into 1/2 inch pieces
4 -8 ounces mushrooms, sliced
garlic, lots of it,peeled and minced (I use about 6 cloves, depends on size)
1/4 cup butter, more if you like
1 cup chicken broth
1 1/2 cups cream, can use light cream for lower fat
1 tablespoon cornstarch, dissolved in
3 tablespoons water or 3 tablespoons broth
3/4 cup grated parmesan cheese (more or less)
4 -6 ounces cooked penne pasta

Steps:

  • In a non-stick pan, cook chicken until opaque, about 5 minutes.
  • Remove to bowl.
  • In same pan melt 2 tablespoons butter.
  • Saute Mushrooms over medium heat for a couple of minutes.
  • Add some of the garlic and cook until mushrooms are done.
  • Remove to same bowl as chicken.
  • Melt the rest of the Butter and add the rest of the minced garlic.
  • Cook a couple of minutes,BUT DO NOT brown garlic.
  • Add chicken broth and bring to boil, cook 3 to 4 minuted.
  • Add cream and bring to boil, simmer for 5 minutes.
  • Add corn starch mixture to thicken a bit.
  • Add Parmesan cheese.
  • Salt and pepper to taste.
  • Enjoy.

1/3 cup butter
1 medium onion, chopped

This is the BEST pizza I have ever tried. Even if you don't like mushrooms (i for one do not like mushrooms), or alfredo sauce you will probably will still think this is amazing! This is probably the best pizza I have ever had! I love it! WARNING: May get messy!

1 cup alfredo sauce
1 cup mushroom
pizza dough (Pillsbury is recommended)
6 slices bacon
1 cup mozzarella cheese

  • beat the pizza dough then roll it out into a wide circle.
  • pour the alfredo sauce (not all of it) over the dough and spread it out with a butter knife.
  • cook the bacon then crumple up 3 pieces out of the 6 you cooked
  • dice the mushrooms into small pieces
  • Sprinkle the 3 crumpled pieces of bacon, HALF of the mushrooms, and 1/2 cup of mozzarella cheese all over the pizza dough that is covered with alfredo sauce.
  • add another layer of alfredo sauce over the pizza.

1 cup millet
1 pinch sea salt
2 1/2 cups water
2 teaspoons olive oil
10 mushrooms, sliced, stems separated
1 tablespoon white wine (or water)
1/2 onion, diced
3 garlic cloves, minced
1 cup zucchini, chopped
1 pinch black pepper
2 teaspoons dried basil
1 pinch nutmeg
1/4 cup coconut milk
1 tablespoon nutritional yeast
1/2 lime, juice of
1 tablespoon fresh parsley, as garnish

Steps:

  • If making millet, rinse and drain it, and add 2 cups of water for your 1 cup of millet. Sprinkle sea salt in the water, bring it to a boil and simmer on low for 20 minutes, or until dry and fluffy.
  • Meanwhile, heat a pan to medium heat. Add the oil and the sliced mushroom tops. Reserve the stems for the sauce. Saute the mushrooms for a few minutes while you start on the sauce.
  • Heat a medium sauce pot, add oil, onion and garlic. Stir to coat, and allow to cook for a few minutes until onions are translucent. Stir in the zucchini and mushroom stems and allow to saute for a few minutes until all the vegetables are starting to soften.
  • The next part of this creamy mushroom sauce recipe is to go back to the mushrooms, sprinkle salt on them, and let cook a few more minutes.
  • Add the salt, pepper, basil, nutmeg and optional nutritional yeast, and stir to coat the vegetables. Cook until the zucchini is fully softened.
  • Go back to the mushrooms and when they are fully cooked pour the wine, water and optional lime juice in the pan to deglaze. Set aside until the sauce is finished.
  • Once it is very soft, add the water, coconut milk and lime juice and let simmer for a couple of minutes. Lime juice makes this sauce very light and playful, so if you are looking for a heavier-tasting creamy sauce leave this out and use more coconut milk.
  • Blend the vegetables in a blender or food processor until smooth. Stir in the sauteed mushrooms and serve over the fully cooked millet or other grain, garnished with your choice of fresh green herb.
