Tips:

  • Choose ripe, sweet mulberries: The sweetness of the mulberries will impact the overall flavor of the muffins, so using ripe, sweet mulberries is essential.
  • Use fresh or frozen mulberries: Fresh mulberries are ideal, but frozen mulberries can also be used. If using frozen mulberries, thaw them before adding them to the batter.
  • Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix just until the ingredients are combined.
  • Fill the muffin cups ⅔ full: Filling the muffin cups too full can result in muffins that overflow during baking.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This is the best way to ensure that the muffins are cooked through.
  • Let the muffins cool before serving: This will allow the muffins to set and develop their full flavor.
