Forget standing over a hob flipping pancakes on Pancake Day - make these fluffy pancake muffins, or 'puffins', instead. Serve them warm with maple syrup

Provided by Cassie Best

Categories     Breakfast, Brunch, Dessert, Treat

Time 45m

Number Of Ingredients 10

sunflower or vegetable oil , for the tin
350g plain flour
2 tsp baking powder
50g butter
350ml milk
2 eggs
2 tbsp maple syrup , plus extra to serve
handful of raspberries or blueberries, or a bit of each
½ banana , sliced
icing sugar , for dusting

Steps:

  • Oil a 12-hole muffin tin generously, using a pastry brush to make sure you get in all the corners and up the sides. Heat the oven to 200C/180C fan/gas 6. Mix the flour, baking powder and a pinch of salt in a bowl.
  • Melt the butter in a jug in the microwave. Add the milk, then the eggs and maple syrup, whisk together, then pour into the dry ingredients and whisk again to a smooth batter. Divide evenly between the holes of your tin.
  • Top each muffin with a few berries or slices of banana. Bake for 20-25 mins until golden brown. Test if the muffins are cooked by pushing a skewer into the centre of one. If it comes out clean, they're ready. If not, continue cooking for a few more minutes. Once cooked, cool for 5 mins, then remove from the tin with a cutlery knife. Pile onto a plate, dust with icing sugar and serve while still warm with plenty of extra maple syrup.

MUFFIN TIN APPLE PANCAKES

Muffin Tin Apple Pancakes image

My mom makes these on Christmas morning! And even after they're cold, they still seem to disappear... yummy...

Provided by Cadillacgirl

Categories     Breakfast

Time 20m

Yield 12 pancakes, 6 serving(s)

Number Of Ingredients 13

2 tablespoons butter
2 apples, peeled and sliced
1/4 cup brown sugar
1 tablespoon lemon juice
1/2 teaspoon cinnamon
2/3 cup all-purpose flour
5 tablespoons sugar (or we've used Splenda)
2 tablespoons butter
1/2 teaspoon salt
3 eggs
3/4 cup milk
Pam cooking spray, for spraying
icing sugar, for dusting

Steps:

  • Preheat the oven to 350 and grease a muffin tin with Pam.
  • Saute in a saucepan the 1st amount of butter, apples, brown sugar, lemon juice and cinnamon until the apples are a little soft.
  • Divide the apples among the muffin tins.
  • Combine the remaining ingredients in the blender then pour over the apples in the muffin tins.
  • Bake until cooked through (about 10 minutes at mom's house!).
  • Serve dusted with a little icing sugar!

Tips:

  • Use ripe apples: The riper the apples, the sweeter and more flavorful your pancakes will be.
  • Grate the apples: Grating the apples will help them to cook evenly and quickly.
  • Use a non-stick muffin tin: This will help to prevent the pancakes from sticking and tearing.
  • Grease the muffin tin: Even if you are using a non-stick muffin tin, it is still a good idea to grease it lightly to prevent sticking.
  • Fill the muffin cups only halfway: The pancakes will rise as they cook, so you don't want to overfill the muffin cups.
  • Cook the pancakes over medium heat: This will help to prevent them from burning.
  • Cook the pancakes until they are golden brown: The pancakes should be cooked through and should have a golden brown color.

Conclusion:

Muffin tin apple pancakes are a delicious and easy breakfast or brunch recipe. They are perfect for using up leftover apples, and they are a great way to get your kids to eat their fruit. With a few simple tips, you can make perfect muffin tin apple pancakes every time.
