1/4 cup vegetable oil
divided
1 pound medium-size
shrimp (peeled
deveined and tails removed) OR chicken cutlets
thinly sliced OR thin-cut pork loin chops
thinly sliced
1/2 pound shitake mushrooms
stemmed and sliced
1 cup shredded carrots
4 cloves garlic
chopped
1 small head savoy cabbage
cored and shredded
1 13-ounce package pot stickers from frozen foods section of market
2/3 cup water
6 scallions
cut into 1 inch pieces on an angle
whites and greens
1/3 cup tamari (dark soy sauce)
2 quarts chicken stock
2 eggs
beaten

Steps:

  • Heat 2 tablespoons vegetable oil at the bottom of a soup pot over medium-high to high heat, add shrimp, chicken or pork and stir-fry -- shrimp until just pink, chicken or pork until lightly browned
  • Add mushrooms, carrots and garlic; cook 2 minutes
  • Add cabbage and cook until wilted, about 5 minutes
  • While the cabbage cooks, add 2 tablespoons vegetable oil to a skillet and arrange pot stickers in it
  • Add 2/3 cup water and turn heat to medium-high
  • Cook 8 minutes to evaporate the water then let the pot stickers brown on the bottom, about 1 minute more
  • Add scallions, tamari and some black pepper to the soup pot, stir to combine, then add stock and bring to a boil
  • Pour in beaten eggs and stir the pot until the eggs are cooked and scattered throughout the stoup
  • Place a few potstickers in the bottom of a soup bowl and top with Moo Shu Stoup
  • Yum-O!

1/2 pound pork ((225g, thinly sliced))
1 teaspoon light soy sauce
1 teaspoon Shaoxing wine ((or dry sherry))
1 teaspoon cornstarch
1/2 teaspoon sesame oil
1 slice ginger ((minced))
3 eggs
1 teaspoon Shaoxing wine ((or dry sherry))
1/4 teaspoon salt
1 tablespoon oil
2 tablespoons oil
2 scallions ((chopped))
1 cucumber ((halved, deseeded, then cut on a 45-degree angle))
1 cup rehydrated black wood ears ((washed and drained))
2 teaspoons Shaoxing wine ((or dry sherry))
2 teaspoons light soy sauce
1 tablespoon oyster sauce
2 tablespoons water
Salt ((to taste))

Steps:

  • First, combine the pork with the marinade ingredients and set aside for 20-30 minutes.
  • Then cook the eggs. Whisk together the eggs with the rice wine and salt. Heat 1 tablespoon of oil in a wok over high heat. Add the beaten eggs, scramble, and turn off the heat. Dish out the cooked eggs and set aside.
  • Heat the wok over high heat once again, and add 2 tablespoons of oil. When the oil starts to smoke, add the pork and sear the meat until lightly browned. Then add the chopped scallion and stir.
  • Next, add the sliced cucumbers and wood ear mushrooms. Stir fry to thoroughly combine the ingredients. Now it's time to add the Shaoxing wine, light soy sauce, oyster sauce and water.
  • Stir fry everything well for an additional 30 seconds. Finally add the cooked eggs, stir-fry for another 30 seconds, and serve!

1 tablespoon light soy sauce
½ teaspoon sesame oil
1 tablespoon hoisin sauce ((plus extra for serving))
¼ teaspoon ground white pepper
¼ teaspoon salt
3 ½ tablespoons vegetable oil ((divided))
1 1/2 cups carrot ((julienned, about 1 to 2 small/medium carrots))
4 ounces spiced tofu ((julienned))
1½ cups celery ((julienned))
1 red bell pepper ((thinly sliced))
6 fresh Shiitake mushrooms ((thinly sliced))
2 cloves garlic ((minced))
1 leek ((julienned, about 3 cups))
1 tablespoon Shaoxing wine
Mandarin pancakes

Steps:

  • Stir together the light soy sauce, sesame oil, hoisin sauce, white pepper, and salt, and set aside.
  • Heat your wok over high heat with ½ tablespoon oil. Stir-fry the julienned carrots for 90 seconds, remove, and set aside. Using the same method, with ½ tablespoon oil each--cook the spiced tofu, celery, red bell pepper, and shiitake mushrooms separately, and set those aside.
  • Next, heat the wok over high heat with the remaining tablespoon of oil, and add the minced garlic and leeks.
  • Stir fry the vegetables until the leeks are just wilted (about 2 minutes), and add the carrots, five-spiced tofu, celery, bell pepper, and mushrooms back to the wok.
  • Spread the Shaoxing wine around the perimeter of the wok, and add the sauce mixture we prepared earlier. Stir-fry everything together for another minute.
  • Serve immediately with steamed Mandarin pancakes and hoisin sauce on the side!

4 garlic cloves, chopped
1 head savoy cabbage, cored and shredded
1 (13 ounce) package pot stickers
2/3 cup water
6 scallions, whites and greens, cut into 1-inch pieces
1/3 cup tamari (dark soy sauce)

Steps:
