Nonstick cooking spray or unsalted butter, for greasing the pan
3 cups all-purpose flour, plus more for the pan
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3 medium apples (I used a mix of green and Pink Lady apples)
1 1/2 cups vegetable or canola oil
2 cups granulated sugar
1/2 cup dark brown sugar
2 teaspoons vanilla extract
3 large eggs
One 11-ounce package caramels, preferably Kraft Caramels
1/4 cup whole milk

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a 9- or 10-inch Bundt pan.
  • Mix together the flour, cinnamon, baking soda, nutmeg and salt in a medium bowl. Set aside. Peel, core and dice 3 cups apples. Set aside.

3 cups flour
2 cups sugar
3 teaspoons baking powder
1/8 teaspoon salt
1 cup oil
4 eggs
1/2 cup orange juice or 1/2 cup milk
2 1/2 teaspoons vanilla
3 large apples, sliced
1/2 cup sugar
cinnamon (enough cinnamon to make a dark mixture)

Steps:

  • Mix dry ingredients.
  • Make a hole in the center and add eggs, juice, oil and vanilla.

This is my husband's favorite. His mom gave it to us many years ago. I have refined the recipe just a little since then. Please don't tell her...hehe. It doesn't need a frosting because it is so yummy just by itself, but it would dress it up to drizzle with a thin creamy icing. I had misplaced this recipe for the longest time and had thought I had lost it, so I hadn't made it for ages. My husband found it this weekend and I have made it twice since then. Both times it was gone before it was even all the way cooled, thanks to our 5 daughters. My husband and I barely managed to claim a few bites before it disappeared. I'm posting it here to share with everyone and to keep it from ever getting lost again. It's definately a keeper.

1 cup sugar
1/4 cup oil
1/4 cup butter, very soft
2 eggs

2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup vegetable oil
