1/4 cup cider vinegar, eyeball it
3 tablespoons vegetable oil, eyeball it

PICKLEBACK SLAW

Pickleback Slaw image

Those artisanal pickles from the farmers' market sure are expensive, so don't throw out the juice in which they're pickled. You can serve the stuff as a shot to accompany a glass of whiskey and a cold beer, as the New York chef Zakary Pelaccio has done, or you can whisk it into the dressing used for coleslaw, as is done here. Don't have any? Never fear: a few tablespoons of relish from the market will offer a similar effect.

MRS. CLARK'S LINDBERG RELISH (COLESLAW)

Mrs. Clark's Lindberg Relish (Coleslaw) image

Mrs. Clark was my sister's MIL and if you like the vinegar type of coleslaw, this is for you. No cooking, no sealing - use in a week. Although I make it every year for a Company potluck picnic, I've never measured the quantity it makes or timed the preparation so I've guessed. I only know that I never bring any back home.

Time 30m

Yield 25 serving(s)

Number Of Ingredients 10

2 heads cabbage
8 medium carrots
12 medium onions
2 red peppers
2 green peppers
1/2 cup salt
8 cups vinegar
1 tablespoon mustard seeds
1 tablespoon celery seed
6 cups sugar

Steps:

  • Chop all vegetables- hopefully, you have a food processor.
  • Combine vegetables in a large bowl- and I do mean LARGE- with salt and combine well.
  • Let mixture sit for an hour, rinse, then drain well -- I put batches into a colander and press hard to remove liquid.
  • Add the rest of the ingredients and mix well.

Tips:

  • Use fresh, high-quality ingredients for the best flavor.
  • Shred the cabbage and carrots finely for a more uniform texture.
  • Use a sharp knife to dice the celery and onion for a clean cut.
  • Whisk the dressing ingredients together until smooth before adding them to the coleslaw.
  • Taste the coleslaw and adjust the seasonings as needed.
  • Chill the coleslaw for at least 30 minutes before serving to allow the flavors to meld.
  • Serve the coleslaw as a side dish with grilled meats, fried chicken, or fish.

Conclusion:

Mrs. Clark's Lindberg Relish Coleslaw is a classic summer side dish that is easy to make and always a crowd-pleaser. With its combination of sweet, tangy, and crunchy ingredients, this coleslaw is sure to be a hit at your next potluck or barbecue.
