Vortex World Famous Potato Salad image

The name says it all, a fantastic potato salad from a top Atlanta restaurant, The Vortex Bar and Grill on Peachtree Avenue. I agree with the reviewer that the cooking time does seem like a long time however, this recipe is from the Vortex Restaurant, and this was the way it appeared in the San Antonio Express News. Therefore each chef should be aware of this and make your own adjustments.

Tips:

  • Use the right potatoes: Red potatoes or Yukon Gold potatoes are ideal for potato salad as they hold their shape well when cooked and don't get mushy.
  • Cook the potatoes properly: Boil the potatoes until they are tender but not overcooked. You should be able to easily pierce them with a fork, but they should not be falling apart.
  • Let the potatoes cool completely: Before you add the other ingredients, let the potatoes cool completely. This will help the potato salad to hold its shape and prevent it from becoming watery.
  • Use high-quality mayonnaise: The mayonnaise is one of the main ingredients in potato salad, so it's important to use a good quality mayonnaise. Look for a mayonnaise that is made with fresh eggs and oil.
  • Don't over-mix the potato salad: Gently fold the ingredients together until they are well combined. Over-mixing the potato salad will make it mushy.
  • Chill the potato salad before serving: Chilling the potato salad for at least an hour before serving will help the flavors to meld and will make it more refreshing.
