This is my mom's recipe for Rice Pudding. It's the best I've ever tasted and it gets rave reviews from everyone I serve it to. Sprinkle with nutmeg or cinnamon, if desired. For creamier pudding, use short or medium grain rice.

¾ cup uncooked white rice
2 cups milk, divided
⅓ cup white sugar
¼ teaspoon salt
1 egg, beaten
⅔ cup golden raisins
1 tablespoon butter
½ teaspoon vanilla extract

Steps:

  • Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
  • In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.

1 cup cooked long grain rice
1 cup whole milk
5 teaspoons sugar
Dash salt
1/2 teaspoon vanilla extract
Optional toppings: Whipped cream, sliced almonds, raisins, ground cinnamon and cinnamon stick.

Steps:

  • In a small heavy saucepan, combine rice, milk, sugar and salt; bring to a boil over medium heat. Reduce heat to maintain a low simmer. Cook, uncovered, until thickened, about 20 minutes, stirring often. Remove from the heat; stir in vanilla. Spoon into serving dishes. Serve warm or cold; serve with desired toppings.

I know, I know, this is a recipe I got off a box of Minute Rice a long time ago. This is so good, and my family ate it up so fast. Now that it is down to just the two of us, I still don't have any left overs. I still keep a large box of Minute Rice in the pantry, just for this rice pudding.

4 c milk
1 egg, well beaten
1 large jell-o vanilla pudding mix, cook and serve (4.6 oz) or 2 small boxes)
do not use instant pudding mix
1 c dry minute rice
1/4 c raisins (optional)
1/4 tsp cinnamon, ground
1/8 tsp nutmeg

Steps:

  • 1. Stir milk and egg into pan. Gradually, add pudding mix. Stir in rice and raisins. (As milk mixtures warms up the pudding powder will disolve.)
  • 2. Cook over medium heat. Stir until it boils. Do not let it stick to bottom of pan or it will burn. Pour into serving bowls ( 4 ) In my case, 1 small bowl for me, and the rest in a large bowl for my husband.
