This stuffing recipe used to be on the Mrs. Cubbison's stuffing box before "low fat" became the norm. We still like it this way with all the added veggies.

1 (24 ounce) box mrs. cubbison's bread stuffing mix, prepared (herb or cornbread)
2 cups celery, chopped
2 cups onions, chopped
1/2 lb mushroom, chopped
2 cups butter
2 cups chicken broth

Steps:

  • Melt butter in a large pot.
  • Add celery, onion, and mushrooms.
  • Simmer about 5 minutes to slightly soften vegetables.
  • Toss in dressing mix to spread butter evenly.
  • Stir in liquid and toss.
  • Place in a greased casserold dish, cover, and bake at 350 degrees for about 45 minutes.
  • Uncover the last 15 minutes for a crisper top.
  • NOTE: The new packages of dressing have only 10 ounces per box, but the recipe still works as well.

1 1/4 cup(s) water, warm (70*to 80*)
1 large egg
4 tablespoon(s) minced onion
1 tablespoon(s) butter, softened
1 tablespoon(s) sugar
1 1/2 teaspoon(s) poultry seasoning
1 tablespoon(s) parsley flakes
1 teaspoon(s) salt
1/2 teaspoon(s) celery seed
3 1/2 cup(s) bread flour
2 1/4 teaspoon(s) active dry yeast

Steps:

  • In bread machine, place all ingredients in order suggested by manufacturer. Select basic bread setting.
  • Bake according to your bread machine.
  • Check dough after 5 minutes of mixing; add 1 to 2tablespoons of water or flour if needed.

This recipe is for a bread machine but I make this on my Kitchen Aid with some amount adjustments. I use this for my stuffing recipes, it's a wonderful change from white bread, and makes a great turkey sandwich bread also!

1 cup milk, plus
1 tablespoon milk (70F to 80F)
1 egg
2 tablespoons butter or 2 tablespoons margarine, softened
2 tablespoons brown sugar
1 1/2 teaspoons salt
1/3 cup yellow cornmeal
3 cups bread flour
5 teaspoons dried onion flakes (or to taste)
1 1/2 teaspoons celery seeds
3/4 teaspoon poultry seasoning
1/2 teaspoon dried sage
1/2 teaspoon pepper (no more, as it will interfere with the yeast)
2 1/4 teaspoons active dry yeast
