1 teaspoon kosher salt (divided)
1/4 teaspoon freshly ground black pepper
2 cans diced tomatoes with basil, garlic, and oregano ((14.5-ounce cans))
2 cups water
1 pound whole wheat fettuccini pasta (or substitute another long, straight pasta such as spaghetti)
4 ounces reduced-fat feta cheese (divided)
Finely chopped fresh basil (optional)

Steps:

  • In a large pot or Dutch oven with a lid, heat the olive oil over high for 1 minute, then add the chicken breast halves. Sprinkle with 1/2 teaspoon salt and the black pepper. Steps:

  • Preheat the oven to 375˚F.
  • Thaw the spinach and wring as much of the water from it as possible.

1 (8 ounce) jar spaghetti sauce (i like newmans own)
3 cups of shredded mozzarella cheese
1/2 cup feta cheese (to taste)
all-purpose flour
plain breadcrumbs
olive oil
2 eggs

  • First prepare your chicken cutlets. Trim the fat, cut each piece lengthwise and in half. (to make the chicken cook faster) A serrated knife makes cutting them lengthwise easier.
  • Prepare your coating. Crack two eggs into a bowl, whisk lightly with a spoon. Next pour flour and breadcrumbs onto two separate sheets of tinfoil.
  • Take each piece of chicken and dip in flour, egg, and breadcrumbs respectively. Set aside.
  • Pour some olive oil into a medium frying pan. (enough to coat the bottom) Turn the burners up to medium heat.
  • All you want to do is brown the cutlets on both side not cook them all the way through.
