Provided by Ina Garten

Categories     main-dish

Time 15m

Yield 3 servings

Number Of Ingredients 9

1 pound fresh bay or sea scallops
Kosher salt and freshly ground black pepper
All-purpose flour, for dredging
4 tablespoons (1/2 stick) unsalted butter, divided
1/2 cup chopped shallots (2 large)
1 garlic clove, minced
1/4 cup chopped fresh flat-leaf parsley leaves
1/3 cup dry white wine
1 lemon, cut in 1/2

Steps:

  • If you're using bay scallops, keep them whole. If you're using sea scallops, cut each 1 in half horizontally. Sprinkle with salt and pepper, toss with flour, and shake off the excess.
  • In a very large saute pan, heat 2 tablespoons of the butter over high heat until sizzling and add the scallops in 1 layer. Lower the heat to medium and allow the scallops to brown lightly on 1 side without moving them, then turn and brown lightly on the other side. This should take 3 to 4 minutes, total. Melt the rest of the butter in the pan with the scallops, then add the shallots, garlic, and parsley and saute for 2 more minutes, tossing the seasonings with the scallops. Add the wine, cook for 1 minute, and taste for seasoning. Serve hot with a squeeze of lemon juice.

MELT-IN-YOUR-MOUTH SLOW COOKER CHICKEN

Melt-in-Your-Mouth Slow Cooker Chicken image

This recipe using only three chicken breasts is very economical and super delicious! My kids love it and they are extremely picky. The chicken just melts in your mouth and is so flavorful! Garlic bread and salad goes well with this meal. I always taste before serving so I will know what, if anything more, I need to add such as Parmesan, Italian dressing, or milk if it's too thick, etc.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
  • Choose Fresh Scallops: Look for scallops that are plump and have a slightly briny smell. Avoid scallops that are slimy or have a strong fishy odor.
  • Sear Scallops Properly: To get perfectly seared scallops, make sure your pan is hot before adding the scallops. Sear the scallops for 2-3 minutes per side, or until they are golden brown and cooked through.
  • Don't Overcook Chicken: Chicken breast can easily become dry and tough if it is overcooked. Cook the chicken until it reaches an internal temperature of 165°F (74°C).
  • Use a Flavorful Marinade: Marinating the chicken in a flavorful marinade will help to infuse it with flavor and keep it moist during cooking.
  • Serve with a Simple Sauce: A simple sauce can help to enhance the flavor of the chicken and scallops. Try a lemon butter sauce, a creamy mushroom sauce, or a white wine sauce.

Conclusion:

This recipe for mouth-melting chicken scallops is a delicious and elegant dish that is perfect for a special occasion. The combination of tender chicken, seared scallops, and flavorful sauce is sure to impress your guests. With a little planning and preparation, you can easily make this dish at home. So next time you're looking for a special meal to make, give this recipe a try. You won't be disappointed!
