This easy cheesy ham casserole is the perfect way to use up your leftover ham and stretch it to feed a crowd!

1 pound medium shells
⅓ cup butter
⅓ cup flour
1 ¾ cups milk
1 cup light cream (10-12% M.F.)
½ teaspoon dijon
1 teaspoon onion powder
¼ teaspoon thyme
salt & pepper to taste
3 cups sharp cheddar (divided)
1 cup gruyere cheese
2 tablespoons parmesan cheese
2 cups diced ham
2 tablespoons butter (melted)
½ cup Panko bread crumbs
1 tablespoon fresh parsley

Steps:

  • Preheat oven to 400°F. Mix together topping ingredients, set aside.
  • Cook shells al dente according to package directions. Drain well.
  • Meanwhile, melt butter, flour and seasonings in a saucepan. Allow to cook 1 minute.
  • Slowly add in cream and milk while whisking after each addition. The mixture will seem thick at first but will smooth out with each addition.
  • Once all of the cream/milk is added, whisk while bringing to a boil over medium heat. Allow to boil 1 minute.
  • Remove from heat and stir in 2 ½ cups cheddar, gruyere cheese, and parmesan until smooth.
  • Mix cheese sauce with cooked pasta and ham and place in a 9x13 pan. Add topping and remaining ½ cup of cheese.
  • Bake 22-26 minutes or until heated through and topping is browned. Cool 5 minutes before serving.

2 cups cubed peeled potatoes
1 large carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups cubed fully cooked ham
2 tablespoons chopped green pepper
2 teaspoons finely chopped onion
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1-1/2 cups 2% milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • Preheat oven to 375°. In a saucepan, bring the potatoes, carrot, celery and water to a boil. Reduce heat; cover and cook until tender, about 15 minutes. Drain. , In a large skillet, saute ham, green pepper and onion in 3 tablespoons butter until tender. Add the potato mixture. Transfer to a greased 1-1/2-qt. baking dish. , In a large saucepan, melt the remaining butter; stir in flour until smooth. Gradually whisk in the milk, salt and pepper. 1 (8 ounce) package egg noodles
1 cup cubed fully cooked ham
1 (12 fluid ounce) can evaporated milk
1 (10.75 ounce) can condensed cream of chicken soup
1 small onion, minced
⅓ pound processed cheese food (such as Velveeta®), cubed
½ cup crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 5 minutes. Drain.
  • Mix egg noodles, ham, evaporated milk, cream of chicken soup, onion, and processed cheese food in a 9x13-inch baking dish until evenly distributed.

I have added the Parmesan Cheese to the topping and sometimes I like to use a combination of Swiss Cheese and Cheddar in the casserole.

2 cups potatoes, peeled and cubed
1 carrot, sliced
2 celery ribs, chopped
3 cups water
2 cups ham, fully cooked and cubed
2 tablespoons green peppers, diced
2 teaspoons onions, finely chopped
7 tablespoons butter, divided
3 tablespoons all-purpose flour
1 1/2 cups milk
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup cheddar cheese, shredded
1/2 cup breadcrumbs
1/4 cup parmesan cheese (optional)

Steps:

  • In a saucepan, bring potatoes, carrot, celery and water to boil.
  • Reduce heat, cover and cook 15 minutes or til tender.
  • Drain and set aside.
  • In large skillet, saute ham, green pepper and onions in 3 tbsp of the butter until vegetables are tender.
  • Add to the potato mixture and transfer to a greased 1 1/2 qt baking dish.
  • In saucepan, melt remaining butter, stir in flour and whisk until smooth.
