This pimento cheese is the best! It's cheesy, tangy, peppery (spicy if you wish), and spreadable. Recipe yields 2 cups.

2 cups freshly grated extra-sharp Cheddar cheese
8 ounces cream cheese, cut into 1″ cubes and softened at room temperature*
4 ounces pimento peppers**, well drained and chopped if in strips
2 tablespoons mayonnaise (Duke's is traditional but I also like Sir Kensington's)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground cayenne pepper (decrease or omit if sensitive to spice)
1/2 medium jalapeño pepper, ribs and seeds removed, and minced (about 1 tablespoon; omit if sensitive to spice)
Freshly ground black pepper, to taste
Salt, to taste

Steps:

  • In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper and jalapeño (if using), and several twists of black pepper.
  • Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or spatula. Beat until the mixture is thoroughly combined.
  • Taste, and add more black pepper if desired, and/or salt for more overall flavor (I usually add a pinch of two). If you'd like your pimento cheese to have more of a kick, add another pinch of cayenne. Blend again.
  • Transfer the mixture to a smaller serving bowl. Serve your pimento cheese immediately, or chill it in the refrigerator for up to 1 week. Pimento cheese hardens as it cools; let it rest for 30 minutes at room temperature to soften.

2 tablespoons pickled jalapeño juice (from jar of Old El Paso™ pickled jalapeño slices)
1 tablespoon Dijon mustard
2 teaspoons soy sauce
2 teaspoons lemon juice
16 oz freshly grated extra-sharp cheddar cheese (4 cups)
4 oz freshly grated Colby cheese (1 cup)
1 jar (4 oz) diced pimientos, drained
3 green onions, thinly sliced
2 tablespoons chopped Old El Paso™ pickled jalapeño slices (from 12-oz jar)
Crackers, as desired

Steps:

  • In large bowl, place mayonnaise, pickled jalapeño juice, mustard, soy sauce and lemon juice. Beat with electric mixer on low speed 5 to 10 seconds to combine.
  • Add cheeses; beat on medium speed 15 to 30 seconds to combine. Scrape bowl, then beat on medium speed 2 to 4 minutes longer or until cheese mixture is creamy and spreadable.

2 lb. box velveeta cheese (original), diced into 1-inch pieces
2 4-oz. jar(s) diced pimentos
1/2 c sugar
5 Tbsp cider vinegar
1/2 c miracle whip (do not substitute)

Steps:

  • 1. Put all of the above, except the pimentos, in the large bowl of your mixmaster (I used my food processor).
  • 2. When you start this begin on the slow speed until all ingredients are mixed.
  • 3. Slowly increase speed and then beat on high until the mixture is smooth. If using a food processor, blend for 1-1 1/2 minutes then check to see if smooth.
  • 4. Drain juice off of one jar of diced pimentos.
  • 5. Add pimentos and remaining juice. Mix just until combined (if you are using a food processor pulse until just combined...you want the pieces of pimento to show up).
  • 6. This recipe easily halves...you'll be using only one jar of pimentos, so drain half the juice off of it.
  • 7. Store in a covered container in the refrigerator.
  • 8. Great to make as sandwiches. Also good on Ritz crackers or as a filling in celery.
