8 ounces uncooked mostaccioli
1 large egg
1 large egg white
2 cups 1% cottage cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 cup shredded part-skim mozzarella cheese, divided
2/3 cup shredded Parmesan cheese, divided
1/3 cup minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
2-1/2 cups meatless spaghetti sauce, divided

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large bowl, combine the egg, egg white, cottage cheese, spinach, 2/3 cup mozzarella cheese, 1/3 cup Parmesan cheese, parsley, salt and pepper; set aside. Drain pasta; stir in 2 cups spaghetti sauce., Layer half of the pasta mixture in a greased 11x7-in. baking dish coated with cooking spray. Layer with spinach mixture, remaining pasta mixture and remaining spaghetti sauce. , Cover and bake at 350° for 35-40 minutes or until bubbly. Uncover; sprinkle with remaining mozzarella and Parmesan cheeses. Bake 5 minutes longer or until cheese is melted.

This recipe came to me from my old across-the-hall neighbor in New York City. Makes a wonderfully smooth and cheesy side dish, or it can be easily doubled for Pot Lucks and Parties. Absolute comfort food!

8 ounces mostaccioli pasta (ziti or penne' pasta could also be used)
1/4 cup butter or 1/4 cup margarine
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
4 1/2 cups milk
2 cups shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
1 cup shredded swiss cheese

Steps:

  • Cook Pasta "al dente" style. While Pasta is cooking, preheat oven to 350 degrees.
  • Melt Butter in a large saucepan under medium heat. Stir in Flour, Salt and Pepper. Gradually add Milk; cook and stir until it thickens and slowly bubbles.
  • Remove from heat; stir in 1 cup each Cheddar and Parmesan Cheese, blend until mixed well. Stir in Pasta.
  • Spoon 1/2 Pasta and sauce into greased 13" x 9" baking dish. Layer with Swiss Cheese, then remaining Pasta mixture.
  • Cover and bake 25-30 minutes or until hot and bubbly.
  • Uncover and sprinkle remaining Cheddar Cheese over the top. Serve after Cheese melts, about 5-10 minutes.

3 cups mostaccioli pasta or 3 cups penne pasta
1/4 cup margarine
1/4 cup flour
2 cups milk (skim will work if you prefer)
1/2 cup fresh parmesan cheese, grated
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/8 teaspoon thyme
1/8 teaspoon nutmeg
3 cups cooked, drained, cut-up broccoli
1/2 cup shredded swiss cheese

Steps:

  • Cook mostaccioli according to package directions.
  • Drain and rinse in cold water.
  • In a medium saucepan, melt margarine.
  • Stir in flour until blended.
  • Add milk.
  • Cook until thickened, stirring constantly.
  • Stir in Parmesan cheese, salt, garlic powder, thyme and nutmeg.
