Yield 2 (10-inch) crusts

Number Of Ingredients 6

12 tablespoons (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 teaspoon kosher salt
1 tablespoon sugar
1/3 cup very cold vegetable shortening
6 to 8 tablespoons (about 1/2 cup) ice water

Steps:

  • Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
  • Cut the dough in half. Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Repeat with the top crust.

Tips:

  • Use cold, unsalted butter: This will help to create a flaky crust. You can also use frozen butter, but be sure to grate it first.
  • Work the butter into the flour mixture quickly: Overworking the dough will make it tough. Use your fingers or a pastry blender to work the butter into the flour until it resembles coarse crumbs.
  • Add just enough water to hold the dough together: The dough should be slightly moist, but not wet. If the dough is too wet, it will be difficult to roll out and will not hold its shape.
  • Chill the dough before rolling it out: This will help to prevent the dough from shrinking in the oven.
  • Roll the dough out on a floured surface: This will help to prevent the dough from sticking.
  • Trim the edges of the dough: This will help to create a neat and even crust.
  • Bake the pie crust at a high temperature: This will help to create a golden brown crust.

Conclusion:

This no-fail pie crust recipe is the perfect foundation for any pie. It is easy to make and always turns out flaky and delicious. With a few simple tips, you can create a pie crust that will impress your friends and family. So next time you're in the mood for a pie, give this recipe a try.
