Time 30m

Yield 6 to 8 servings

Number Of Ingredients 8

3 pounds spinach
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 cloves garlic, lightly smashed
3/4 cup heavy cream
1 teaspoon freshly ground nutmeg
1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper

Steps:

  • Wash the spinach in several changes of water to get rid of any grit. Drain the spinach but keep some of the water clinging to the leaves. Heat the butter and oil in a large skillet over medium-high heat and add the spinach and garlic. Cook, turning frequently, until the spinach has wilted down evenly. Remove the garlic and put the spinach into a colander and let it drain well. Press out as much liquid as you can from the leaves and chop them coarsely.
  • Heat the skillet again over medium-high heat and add the cream and nutmeg; cook until it reduces a bit, about 5 minutes. Add the spinach and parmesan and season with salt and pepper. Cook until the spinach is hot, about 5 more minutes. Serve immediately.

Provided by á-1946

Number Of Ingredients 10

1/4 cup unsalted butter
3/4 cup minced yellow onion
1 1/4 tbs minced garlic
2 tsp seasoned or coarse salt
1 tsp fresh ground pepper
3/4 tsp fresh ground nutmeg
1/4 cup all-purpose flour
3 1/7 cups half and half cream
2 1/4 lbs chopped frozen spinach
1/3 cup grated Parmesan cheese

Steps:

  • 1. In a large saucepan, melt the butter over medium-low heat. Add the onion and garlic and sautee for about 10 minutes, or until the onion is translucent. Stir in the salt, pepper and nutmeg. 2. Sprinkle the flour over the onion and cook over low heat, stirring with a wooden spoon, for about 4 minutes, or until there is a nutty aroma. Add the half and half and cook over medium low heat, whisking occasionally, until hot. Raise the heat to medium-high and bring to a boil. Whisk continuously for 6 to 8 minutes, or until the mixture thickens. 3. Remove the pan from the heat. Using a handheld immersion blender, blend the sauce for 1 to 2 minutes or until smooth. Stir in the spinach until well mixed and heated through. Serve immediately or cover and set aside to keep warm. 4. Just before serving, re-heat over medium heat, and stir in the parmesan cheese. Correct seasonings if necessary.

Tips:

  • If you don't have heavy cream, you can substitute milk and butter. For each tablespoon of heavy cream, use one tablespoon of milk and one-half tablespoon of butter.
  • To make the creamed spinach even creamier, add a tablespoon of sour cream or crème fraîche.
  • For a touch of extra flavor, add a pinch of nutmeg or garlic powder to the creamed spinach.
  • If you're using frozen spinach, be sure to thaw and drain it before cooking.
  • Serve the creamed spinach as a side dish with grilled or roasted chicken, fish, or steak.

Conclusion:

Creamed spinach is a classic side dish that is easy to make and delicious to eat. It's a great way to get your daily dose of vegetables, and it's also a good source of fiber and vitamins. So next time you're looking for a quick and easy side dish, give creamed spinach a try.
