1 stick (1/2 cup) unsalted butter, melted
8 (17- by 12-inch) phyllo sheets, thawed if frozen

Steps:

  • Make filling:
  • Cook onion in oil along with salt, cumin, ginger, turmeric, pepper, and coriander in a 3-quart heavy saucepan over moderate heat, stirring, until softened, about 5 minutes. Add chicken, broth, water, and cinnamon stick and simmer, covered, turning chicken over once, until meat is very tender, about 45 minutes total. Transfer chicken with tongs to a bowl, reserving cooking liquid.
  • When cool enough to handle, shred chicken, discarding skin and bones, and transfer to a large bowl. Transfer cooking liquid to a 2-cup glass measure (do not clean saucepan) and let stand 1 minute, then skim off fat and discard cinnamon stick. Return liquid to saucepan and simmer over moderately high heat, uncovered, until reduced to about 1/4 cup (liquid will look like a glaze in bottom of pan), about 8 minutes, then stir into shredded chicken along with almonds.
  • Reserve 2 tablespoons beaten egg in a cup for egg wash. Lightly season remaining egg with salt and pepper, then cook in 1/2 tablespoon butter in an 8- to 10-inch nonstick skillet over moderately high heat, stirring, until just set but still slightly soft. Stir scrambled egg into filling.
  • Make rolls:
  • Put oven racks in upper and lower thirds of oven and preheat oven to 450°F.
  • Put 1 phyllo sheet on a work surface, keeping remaining phyllo covered with overlapping sheets of plastic wrap and a damp kitchen towel, and brush generously with some melted butter. Evenly sift 1/4 teaspoon cinnamon over buttered phyllo using a fine-mesh sieve, then top with another phyllo sheet and generously brush with butter.
  • Halve buttered phyllo stack crosswise, then arrange 1 half with a long side nearest you. Spread 1/4 cup chicken filling in a narrow strip along edge nearest you, then roll up filling tightly in phyllo, leaving ends open. Transfer roll, seam side down, to a cutting board set inside a baking pan (to help contain mustard seeds when sprinkling). Make another roll with remaining half stack. 1 large onion, chopped
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon turmeric
1/8 teaspoon crumbled saffron threads
1 tablespoon all purpose flour
2 cups low-salt chicken broth
1 1/2 pounds skinless boneless chicken thighs
1/4 cup chopped golden raisins
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh Italian parsley
Phyllo:
1/2 cup slivered almonds
3 tablespoons powdered sugar
1/2 teaspoon coarse kosher salt

  • For filling:

Serve this with the Spicy Tomato Sauce that is also in this cookbook. Just a wonderful appetizer. A bit lengthy....yet worth the oooohhs and aaahhhhs!!! **NOTE: Rolls can be assembled (but not coated or cut) 1 day ahead and chilled, covered. They can also be assembled and cut (but not coated or baked) 2 weeks ahead and frozen, wrapped well in plastic wrap. Cut frozen rolls, then bake (do not thaw) in a preheated 350ºF oven for about 20 min.

1 lb ground chicken (I prefer chicken) or 1 lb ground turkey (I prefer chicken)
2 tablespoons fresh parsley, finely chopped (My addition, not hers) (optional)
1/2 medium onion, grated (The key to great meatballs & I dislike onion)
1 1/2 teaspoons paprika
1 teaspoon cumin
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/4 cup oil
1/2 cup flour, to coat (optional)

Steps:

  • Mix parsley, onion, & spices with the ground chicken (or turkey). Make sure it is well blended so that the spices are evenly distributed throughout the mixture.
  • Make 1 inch balls flattened to about 1/2 inch thickness.
  • Optional: Dip the balls into the flour until coated. (The ones in the picture have been made this way).
  • Pour enough oil to just cover the bottom of the frying pan, heat on medium heat.
  • Place the balls into the heated oil. Turn frequently so they do not burn on the sides. Cook until they are done all the way through.
  • Optional: To eat Moroccan style, use pieces of a thick bread to break off chunks of meatball. Pop into mouth & enjoy. (No utensils).

8 boneless skinless chicken thighs
2 garlic cloves, crushed
1 tablespoon ground cumin

2 ounces split red lentils
14 ounces chopped tomatoes
1 tablespoon tomato ketchup
3 cups chicken stock
1 cinnamon stick
5 ounces dried apricots
1 ounce mint leaf, to serve (optional)

Steps:

  • Heat oven to 350°F Rub 1 tbsp olive oil into the chicken thighs. Mix the garlic, cumin, coriander, salt, pepper and paprika together, then rub all over the chicken thighs on both sides.
  • Heat a large flameproof casserole, add the chicken thighs and cook over a medium heat for 5 mins until golden on both sides.
  • You might need to do this in 2 batches, depending on the size of the casserole. Set the chicken aside. Turn down the heat, add the remaining oil and fry the onion for 5 mins until softened.
  • Stir in the rest of the ingredients, apart from the mint and bring to the boil. Place the chicken thighs on top and pour in any juices. Cover and cook for 1½ hrs, until the meat is tender and the sauce thickened. Season to taste.
  • Can be cooled and frozen at this stage for up to 1 month.
  • Defrost thoroughly in the fridge, then gently warm through. Scatter with fresh mint leaves and serve with couscous or rice.

5 chicken quarters
1/4 cup olive oil (for frying)
salt and pepper
1 teaspoon cinnamon
2 tablespoons honey
1/2 lb prune
6 ounces dried apricots
6 ounces golden raisins
2 green apples
3 ounces whole almonds, blanched
1 cup water
1 cup dry white wine

Steps:

  • Heat oil in a large, heavy frying pan.
  • Brown chicken pieces, seasoning with salt, pepper, cinnamon and honey.
  • Scatter the dried fruits around the chicken.
  • Pour in water and wine. Bring to a boil then lower flame and simmer for about 1 1/2 hours, or until sauce is thick and chicken is tender.
  • Peel and core the apples and cut into quarters. Add to the pot and cook until soft.
  • In a separate fry pan, brown the almonds until golden in a little oil.
  • Serve chicken pieces with fruit spooned on top and sprinkled with almonds.
