1 1/4 lbs boneless skinless chicken breasts, cut into 1 1/2 inch cubes
2 tablespoons olive oil
1 large red pepper, cut into pieces
2 tablespoons fresh cilantro, chopped

Steps:

1 whole chicken (4 pounds), quartered, skin on
1 lemon, quartered
