Ras el Hanout ( "top of the shop" ) is a spice mixture from Morocco that can contain anywhere from 10-100 different spices. After checking cookbooks & searching online I decided on this combination for this spice mix.

2 teaspoons ground nutmeg
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground ginger
2 teaspoons turmeric
2 teaspoons salt
2 teaspoons cinnamon
1 1/2 teaspoons sugar
1 1/2 teaspoons paprika
1 1/2 teaspoons ground black pepper
1 teaspoon cayenne pepper
1 teaspoon cardamom powder
1 teaspoon ground allspice
1/2 teaspoon ground cloves

Steps:

  • Mix all the spices together.

Entered for safe-keeping. From June 2012 Vegetarian Times. Yet another version of this spice best known as seasoning in Moroccan couscous, as you will have to experiment to find your favorite version to suit your taste preference and spice availability. Compared to my Recipe #374781 #374781, this version has much less cinnamon, and a lot more ground coriander, and it uses smoked paprika. Ras El Hanout can contain up to 50 different spices and vary in heat and intensity. VT said its version is mild and simplified, yet full of flavor.

PLAN/PURCHASE
1 tsp fresh coriander seeds
1 tsp fresh cumin seeds
1/4 tsp red pepper flakes
1/2 tsp ground ginger
1/2 tsp ground turmeric
1 tsp sweet paprika
1 tsp freshly ground cinnamon
1/2 tsp ground cardamom
1/4 tsp ground clove

Steps:

  • 1. PREP/PREPARE
  • 2. Chef's Note: This recipe will make about 3 tablespoons of spice.
  • 3. Chef's Note: You will notice that this recipe calls for less ingredients than most recipes for Moroccan spice, but after playing around with it for a couple of years, I find it works for me.
  • 4. Place a small saucepan over medium heat.
  • 5. Add the coriander and cumin seeds, and toss until fragrant and beginning to brown, about 3 to 5 minutes.
  • 6. Chef's Note: Adding spices to a hot pan (called blooming) is a great way to bring out additional flavor notes in many spices.
  • 7. Allow the coriander and cumin seeds to cool, about 10 minutes.
  • 8. Place the seeds and the red-pepper flakes into a spice grinder, and process until they are ground into a powder.
  • 9. Add to a bowl, and then mix in all the other spices.
  • 10. Place into an airtight container until needed. Enjoy.
  • 11. Keep the faith, and keep cooking.

Tips:

  • When making the spice mix, use a coffee grinder or a mortar and pestle to grind the spices into a fine powder.
  • Store the spice mix in an airtight container in a cool, dark place for up to 6 months.
  • To use the spice mix, add it to taste to your favorite dishes. It can be used in meat dishes, vegetable dishes, soups, and stews.
  • If you don't have all of the spices listed in the recipe, you can substitute similar spices. For example, you can use ground cumin instead of ground coriander, or ground ginger instead of ground cinnamon.
  • You can adjust the amount of heat in the spice mix by adding more or less cayenne pepper.
