8 ounces Raisins or dried cherries
⅜ cup Fresh Orange Juice
¼ cup Fresh Lemon Juice
1.33 tablespoons Fresh Orange Zest ((1 tablespoon, 1 teaspoon))
2 tablespoons Brown Sugar
1 teaspoon Salt, kosher
1 teaspoon Cinnamon, ground
1 cup Vegetable Oil (or Olive oil)

Steps:

  • Combine grated carrots, dried raisins, or cherries in a large mixing bowl and set aside.

I also think buying those already grated carrots would be mighty handy. Use only 1/4 cup of the dressing, and use the remainder of the dressing for a beet, orange, and greens salad.
