Yield 4

Number Of Ingredients 19

1 cup uncooked medium or long grain rice
2 tablespoons olive oil, or a little more if desired
1 onion, coarsely chopped
1 green pepper, coarsely chopped
1/2 yellow pepper, coarsely chopped
1/2 red pepper, coarsely chopped
3 or more cloves of garlic, pressed or very finely chopped
1 large tomato, peeled, seeded and chopped
1 large tomato, grated
2 1/3 cups chicken, beef or vegetable broth
1 to 2 tablespoons tomato paste
2 to 3 tablespoons chopped cilantro or parsley
1/2 teaspoon salt, or to taste
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper and/or black pepper
1/4 teaspoon turmeric
pinch of saffron threads (optional)
1 small cinnamon stick (optional)

Steps:

  • Gather the ingredients.
  • Heat the broth to nearly boiling, then hold warm over low heat.
  • In a deep skillet or heavy bottomed pot placed over medium heat, saute the rice, onions and peppers in the oil. When the rice begins to brown, add the garlic and tomatoes. Cook for several minutes, stirring frequently.
  • Add the broth, tomato paste, cilantro and spices. Bring the liquids to a boil then reduce the heat, cover the pan, and simmer gently for 25 to 30 minutes without stirring, until the rice is tender and has absorbed most of the liquids.
  • Remove the rice from the heat and lightly stir with a fork to fluff the rice and mix the vegetables throughout. It should still be a little saucy; if not, gently mix in a few tablespoons of hot water. Cover and leave the rice sit for at least five minutes before serving.

BROWN RICE WITH MISO (RICE COOKER)

Brown Rice With Miso (Rice Cooker) image

From The Ultimate Rice Cooker Cookbook. You may use short, medium, or long grain brown rice in this dish. The authors call for a 6 cup rice cooker, but I've had no problem using a 3 cup model. Cook time includes resting time after the cycle finishes.

Provided by IngridH

Categories     Brown Rice

Time 1h22m

Yield 3-4 serving(s)

Number Of Ingredients 5

1 1/2 tablespoons miso (white or yellow)
2 1/4 cups water or 2 1/4 cups vegetable stock
1 inch fresh gingerroot, peeled
2 teaspoons lemon juice
1 cup brown rice

Steps:

  • Dissolve the miso in 1/4 cup of the water.
  • Combine the dissolved miso and remaining ingredients in the rice cooker bowl.
  • Set the machine for the regular or brown rice (if you have one) cycle.
  • When the machine switches to 'keep warm', set a timer for 15 minutes.
  • After 15 minutes, fluff the rice with the plastic paddle or a wooden spoon.
  • Discard the ginger and serve, or leave on the 'keep warm' setting for up to 2 hours.

BROWN RICE IN THE RICE COOKER

Categories     Rice

Time 35m

Yield 8 , 8 serving(s)

Number Of Ingredients 5

2 cups brown rice
2 garlic cloves
salt, to taste
1 teaspoon olive oil
5 cups water

Steps:

  • Spray your rice cooker pot with a non-stick cooking spray. This works wonders at keeping your rice from sticking and burning.
  • Add your brown rice and water. While the typical rice-to-water ratio for white rice is one part rice to two parts water, brown rice works better if you go with one part rice to two and a half parts water.
  • Add salt to taste.
  • On a cutting board, press the flat edge of a knife on the cloves of garlic to squash them. Remove and discard the papery skin and drop the smashed cloves into the cooker.
  • Add olive oil.
  • Cover the pot and turn on the cooker. Expect brown rice to take a little longer to cook than white rice (about 30 to 40 minutes instead of 20).

Tips:

  • Use a good quality basmati rice for the best results. This type of rice has a long grain that cooks up light and fluffy, and it has a nutty flavor that pairs well with the spices in this dish.
  • If you don't have a rice cooker, you can cook the rice on the stovetop. Just bring 2 cups of water and 1 teaspoon of salt to a boil in a medium saucepan. Add the rice and stir. Reduce heat to low, cover, and simmer for 18 minutes, or until the rice is cooked through. Remove from heat and let stand for 5 minutes before fluffing with a fork.
  • Feel free to adjust the amount of spices to your taste. If you like it spicy, add more chili powder or cayenne pepper. If you prefer a milder dish, reduce the amount of spices.
  • This dish is also a great way to use up leftover vegetables. Add any vegetables that you have on hand, such as carrots, peas, or green beans.
  • Serve the rice with your favorite Moroccan dishes, such as chicken tagine, lamb stew, or vegetable couscous.

Conclusion:

This Moroccan brown rice is a delicious and easy-to-make side dish that is perfect for any occasion. With its fragrant spices and fluffy texture, it is sure to be a hit with everyone at your table. So next time you're looking for a healthy and flavorful side dish, give this recipe a try.
