1/2 cup chopped dried apricots
1/2 cup chopped dates
1/4 cup orange juice
2 cups all-purpose flour
1/2 cup sugar
1/4 cup packed brown sugar
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon crushed red pepper flakes
2 large eggs, room temperature
3/4 cup 2% milk
1/4 cup unsalted butter, melted
1 tablespoon grated orange zest
1/3 cup sweetened shredded coconut
1/4 cup chopped pecans
ORANGE BUTTER:
1/2 cup unsalted butter, softened
4 teaspoons confectioners' sugar
2 teaspoons grated orange zest
4 teaspoons orange juice

Steps:

  • Preheat oven to 350°. In a small saucepan, combine apricots, dates and orange juice; bring to a boil. Cook, uncovered, 1 minute. Remove from heat; let stand, covered, 10 minutes., In a large bowl, whisk flour, sugars, baking powder, salt and spices. In a another bowl, whisk eggs, milk, melted butter and orange zest until blended. Add to flour mixture; stir just until moistened. Fold in coconut, pecans and apricot mixture., Transfer to a greased 9x5-in. loaf pan. Bake 50-55 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool., In a small bowl, beat remaining ingredients until blended. Serve bread with orange butter.

1 tablespoon active dry yeast
1 1/3 cups warm water
1 teaspoon honey or 1 teaspoon granulated sugar
1 tablespoon vegetable oil
2 1/2 teaspoons anise seeds
2 teaspoons salt
4 cups all-purpose flour, unbleached
1 egg white
3 tablespoons sesame seeds

Steps:

  • Dissolve the yeast in 1/4 cup of the water. Add the honey (or sugar) and let stand until foamy, about 5 to 10 minutes.
  • Add the remaining water, oil, anise, salt, and 2 cups of the flour to a large bowl. Gradually stir in the remaining flour until the mixture holds together.
  • On a lightly floured surface, knead the dough until smooth and elastic, about 10 minutes. Place in a greased bowl, turning to coat. Cover loosely with a towel or plastic wrap and let rise at room temperature until double in bulk, about 1 1/2 hours.
  • Punch down the dough and divide in half. Shape each piece into a ball, cover, and let rest for about 10 minutes.
  • Sprinkle a large baking sheet with cornmeal or fine semolina (or you can grease the baking sheet). Flatten each dough ball into a 6-inch round. Some cooks flute the outer edge, others leave it plain; it's your choice. Place the rounds on the prepared baking sheet, cover, and let.
  • Preheat the oven to 375°F.
  • Pierce the dough around the sides with the tines of a fork or a toothpick. Beat egg whites with water, and brush the tops of the loaves with the egg white mixture. Then lightly sprinkle the top of the loaf with the sesame seeds.

AUTHENTIC MOROCCAN BREAD

This recipe was modified from Paula Wolfert's cookbook. The barley flour gives the bread a more authentic taste but whole-wheat flour can be substituted.

1/4 ounce active dry yeast
1 teaspoon sugar
3 cups unbleached flour
1 1/2 cups barley flour
3 teaspoons salt
1/2 cup lukewarm milk
1 1/2 teaspoons sesame seeds (optional) or 1 1/2 teaspoons cumin seeds (optional)
2 tablespoons oil
3 tablespoons cornmeal

Steps:

  • Add the sugar to 1/4 cup of lukewarm water. Then add the yeast and stir to soften. Let it sit in a warm place until the yeast is bubbly & doubles in volume, roughly 2 minutes.
  • Mix the flours & salt in the large mixing bowl. After yeast is ready add it to the flour along with the milk. Add enough lukewarm water to the mixture to form a stiff dough.
  • Note:Flours differ in their ability to absorb moisture so no precise amount can be given. Add a small amount at a time. If you have added too much the mixture will be extra sticky and it will be hard to get off your hands. The right consistency should allow the dough to pull easily off your fingers.
  • Place the dough onto a lightly floured board & knead hard with closed fists, pushing outward. During the final part of kneading, add 1 tsp of cumin or sesame seeds. It will take between 10-15 minutes to knead the dough thoroughly. You will know it is ready when it achieves a smooth, elastic consistency. (If you are using an electric beater with a dough hook, knead 7-8 minutes on a slow speed.).
  • Take the thoroughly kneaded dough & form it into two balls & let it stand for 5 minutes on the board.
  • Sprinkle cornmeal onto two baking sheets & place to the side. Then lightly grease a mixing bowl with oil. Transfer the first ball of dough to the bowl. Roll the dough along the sides while rotating bowl with your other hand, this will make the dough into a cone shape.
  • Place the dough, wide end down, onto the first baking sheet. Flatten the cone with the palm of your hand to form a disc about 5 inches in diameter with a slightly raised center. Repeat with the second ball. Lightly sprinkle the remaining seeds on top of the bread.
  • Cover each disc loosely with a damp towel & let it rise for about 2 hours in a warm place. The dough will be ready when you can gently pole your finger into it & it will not spring back into place.
  • Preheat the oven to 400 degrees. Using a fork, poke the bread 3 to 4 times & place in the center shelf of the oven. Bake for 12 minutes, then lower the heat to 300 degrees & make 25-30 minutes more.
  • To give the bread a nice brown color, turn the oven on broil. Watch the bread carefully, once it is golden, turn it over to brown the other side. Remove from the oven & let cool.
  • Note: When done, the bread will sound hollow when tapped on the bottom.

This is a flat bread that we use for meals, sandwiches and breakfast. It is our daily bread here in Morocco and is rarely made at home unless rurally as it is so inexpensive and available on every street corner; small or large. This bread is good for soaking up the sauces,broths and for pushing the food onto and sort of dragging from the communal platter to eat. This bread is our knife and fork! This recipe makes 2 loaves and is easily cut in half for one loaf c.2005

3 cups whole wheat flour
2 cups unbleached white flour or 2 cups barley flour
3 1/2 tablespoons dry active yeast
2/3 cup cornmeal
extra cornmeal, for dusting top and placing on tray under bread
2 teaspoons sugar
2 1/2 cups water, tepid 110-115 degrees F
2 tablespoons vegetable oil
2 teaspoons salt

Steps:

  • Preheat oven to 350°F.
  • This bread should not be "dense" with no air bubble pockets inside. You will need to flatten it as much as you possibly can; pull, stretch and flatten to no more than 1/2 inch. Should it come out dense, then next time cut the dough in three and make 3 loaves. Please don't go by my photo as this batch "over-rose.".
  • Combine 1/2 cup flour, sugar, salt, yeast and water in bowl. Stand, covered, in a warm place until bubbly.
  • Add remaining flour, and cornmeal into a large bowl. Add the oil. Add yeast mixture to the flour in the bowl.
  • Mix with hands well to form a firm dough.
  • Knead until smooth.
  • Stand, covered, in a warm place 20 minutes.
  • Shape into 2 rounds (depending on the diameter you desire as Moroccan bread comes in many sizes right down to little ones for sandwiches). Score the top with a sharp knife 1/8" deep into 4 (cutting an X shape), or using your thumb make a dent in the center nearly deep enough to be a hole, though not all the way through.
  • Place on a baking sheet dusted with corn meal and dust the top also with the corn meal gently pushing it into the dough a bit.
  • Stand, covered, until nearly doubled. This being so flat and the amount of yeast, it may not exactly double for you in size and that is fine.
  • Bake 12-18 minutes.
  • If you are making a Moroccan meal and will use bread to eat with you will need at least 2 loaves for 4 people. Cooking time includes standing and is an approximation as flours and temperatures differ.
  • This bread freezes well. Simply freeze as you would any bread and defrost at room temperature. I freeze mine in tied white translucent plastic bags, similar to grocery plastic bags.

1 c water, room temperature
2 tsp salt
1 tsp sugar
2 Tbsp vegetable oil
1 1/2 c bread flour
1 c whole wheat bread flour
1 tsp anise seed
2 tsp bread machine yeast
olive oil for brushing
1 tsp sesame seeds

Steps:

  • 1. Add water, sugar, salt and oil to bread machine.
  • 2. Add both flours to bread machine 1/2 cup at a time, leveling off each 1/2 cup with a knife before adding.
  • 3. Sprinkle anise seed over the flour. Make a well in the flour taking care not to reach the water and add yeast to well.
  • 4. Process on dough setting. When done, spray a large baking sheet with cooking oil. With floured hands, remove dough to baking sheet. Cut in half and form to balls. Press each balls down into circles approximately 1/2" thick.
  • 5. Spray dough with cooking oil, cover with a damp towel and place in a warm spot away from direct sun for 30 minutes. The cooking oil spray will help keep the towel from sticking. Preheat oven to 375.
  • 6. After dough has risen, prick all over with a fork, lightly brush with olive oil and sprinkle with sesame seeds.
  • 7. Place on the center shelf of your oven and shut the door. Wait a few minutes and then place a small cast iron pan with cold water on the bottom shelf of the oven. Bake another 15-20 minutes depending on your oven. Remove when nicely golden but not brown.

2 tablespoons chopped fresh parsley
1 teaspoon ground cumin
1/2 teaspoon ground coriander
For dough
1 cup warm water (105°F. to 115°F.)
4 teaspoons dry yeast
1/4 cup olive oil
1 1/2 teaspoons salt
1 1/2 cups whole wheat flour
1 1/2 cups all purpose flour
2 tablespoons olive oil
Charmoula topping
2/3 cup thinly sliced red bell pepper
2/3 cup thinly sliced red onion
2/3 cup chopped fresh cilantro
1/4 cup water
2 tablespoons olive oil
2 tablespoons paprika
1 tablespoon chopped garlic
1 tablespoon tomato paste
1 1/2 teaspoons ground cumin
1/4 teaspoon dried crushed red pepper

Steps:

  • Make lamb:
  • Stir all ingredients in bowl to blend. Sprinkle with salt and pepper. Chill at least 2 hours and up to 1 day.
  • Make dough:
  • Pour 1 cup warm water into large bowl; sprinkle yeast over. Let stand until mixture is foamy, about 10 minutes. Mix in 1/4 cup oil and salt. Combine both flours in medium bowl. Stir enough flour mixture into yeast mixture 1/2 cup at a time to form slightly sticky dough. Knead on floured surface until smooth and elastic, about 10 minutes. Oil large bowl; add dough and turn to coat. Cover bowl with plastic wrap. Let stand in warm area until doubled in volume, about 1 hour.
  • Meanwhile, heat 2 tablespoons oil in medium skillet over medium-high heat. Add lamb mixture; sauté until just cooked through, about 3 minutes. Transfer to plate.
  • Make charmoula:
  • Combine all ingredients in medium bowl. Season with salt and pepper. Set aside.
  • Punch dough down. Divide into 4 equal pieces. Cover; let stand 10 minutes. Preheat oven to 450°F. Roll out each dough piece on floured surface to 7-inch square. Top each with 1/4 of charmoula, then 1/4 of lamb, pressing to adhere to dough. Oil 2 large baking sheets. Using large spatula, transfer breads to sheets.
  • Bake breads until cooked through and brown on bottom, about 15 minutes. Serve warm.

  • Set the loaf on a wire rack to cool slightly, then serve it warm or at room temperature. {Freezes well].

7 cups all-purpose flour

2 teaspoons kosher salt

Steps:

  • Dissolve yeast in 2 1/2 cups warm water in a large bowl. Weigh or lightly spoon flour into dry measuring cups and level with a knife. Stir salt into yeast mixture. Gradually stir in 7 cups flour, one cup at a time, and beat with a mixer at medium speed until dough forms a ball.
  • Turn dough out onto a lightly floured surface and shape dough into a 12-inch log. Divide dough into 3 pieces then shape each piece into a 4-inch dome-shaped loaf.
  • Place loaves on a baking sheet lightly covered with flour. Dust tops lightly with 2 teaspoons flour, and lightly coat with cooking spray. Cover and let rise in a warm place (85F), free from drafts, 1 hour or until doubled in size. (Gently press two fingers into dough. If indentation remains, dough has risen enough.).
  • Position oven rack in lower third of oven. Preheat oven to 350°F.

SPICY MOROCCAN BREAD SALAD

2 garlic cloves, finely chopped
1 teaspoon ground cumin
country bread, torn into about 1/2 inch pieces
4 stalks celery & leaves, sliced
1 cup canned chick-peas, drained
4 ounces jarlsberg cheese, cut into about 1/4 inch cubes
1/2 cup slivered almonds, toasted
1/4 cup red wine vinegar

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, combine 1/4 cup olive oil, the garlic, and the cumin.
  • Add the bread and toss.
  • Scatter the bread onto a baking sheet and bake, tossing occasionally, if necessary, until toasted.
  • In the same bowl, mix the celery, chickpeas, jarlsberg, almonds, vinegar, and the remaining 1/4 cup of olive oil.
  • Add the bread and toss. Let stand for 1 hour.
  • Season with salt and pepper if you want.
  • Tip: something I haven't tried is toasting the bread in the toaster first and then dipping.

1 large egg
1/4 cup extra virgin olive oil
2 tsp salt
4 1/2 cups lukewarm water
2 2/3 cups chickpea flour, sifted
2 tsp ground cumin
1 tsp harissa
olive oil, for brushing

Steps:

  • 1. Preheat oven at 500°F. Mix together the cumin and harissa powder, and set aside.
  • 2. In food processor, pulse the egg and 1/4 cup olive oil until foamy. Add salt and half of the water and pulse until well incorporated. Add half of the chickpea flour and pulse about 30 seconds or until smooth. Add the remaining water and flour, and pulse just until well incorporated. If not baking bread immediately, place batter in bowl, cover bowl, and keep in refrigerator for up to 2 days.
  • 3. Brush a large cast iron skillet with olive oil. Place skillet in oven for 3 minutes to get very warm.
  • 4. Whisk the batter thoroughly until smooth. Pour batter into warm skillet, and return to oven to bake for 30 minutes.
  • 5. Brush the top of the baked bread with a little olive oil and cover skillet loosely with foil. Place skillet back in oven, turn off heat, and leave skillet in over for 20 more minutes or until evenly browned on top and glazed nicely with the olive oil.
  • 6. Mix together the cumin and harissa, and place in small serving bowl, and serve with the flat bread.
  • 7. Remove skillet from oven, and let cool for 5 minutes. Loosen the edges and bottom with a spatula, and slide baked bread onto a cutting board. Cut into 8 triangle wedges, and serve at room temperature with the cumin/harissa blend, for guests to sprinkle on their serving(s), if they wish.

From the Food and Cooking of Spain, Africa and the Middle East, posted for ZWT3. Especially good for serving with tagines or stews with lots of liquid that needs sopping up. I'm sure it would work well made with all white flour instead of the white/whole wheat blend. Prep time includes rising time.

2 1/2 cups flour
1 1/2 cups whole wheat flour
2 teaspoons salt
1 cup warm milk (thinned with a bit of water - 1 cup of liquid total)
2 teaspoons sesame seeds
2/3 cup warm milk (mixed with some water)
1 teaspoon sugar
2 teaspoons yeast

Steps:

  • place the warm milk mixture ina small bowl or glass measuring cup, stir in the sugar and then sprinkle with the yeast.
  • stir, then set aside in a warm place for about 10 minutes, till frothy.
  • in a large bowl, mix together the two flours and salt.
  • add the yeast mixture and enough warm milk and water to make a fairly soft dough.
  • knead into a ball and knead on a floured surface for 10 minutes, adding as much flour as necessary to make an elastic dough.
  • divide the dough into two equal pieces and shape into flattened ball shapes.
  • place on floured baking trays and press down with your hand to make round breads about 5-6 inches in diameter.
  • cover with oiled plastic wrap or a clean damp cloth and set aside in a warm place for 1 - 1 1/2 hours, till risen.
  • the breads are ready to bake when the dough springs back if gently pressed with a finger.
  • preheat the oven to 400.
  • sprinkle the loaves with the sesame seeds and bake in the oven for 12 minutes.
  • reduce heat to 300 and continue baking for 20-30 minutes till they are golden brown and sound hollow when tapped underneath.
  • serve warm.

Lightly sweetened with honey, this round loaf is a great accompaniment to a steaming bowl of pumpkin soup or a spicy lamb stew. It's an easy recipe to work with and is easy to knead.

1 1/4 cups warm water
1 (1/4-oz) pkg active dry yeast (2 1/3 tsp)
1 Tbsp honey
1/2 tsp salt
2 cups all-purpose flour
1 1/2 cups whole wheat flour
3 Tbsp olive oil
1 Tbsp toasted sesame seeds

Steps:

  • 1. Gently stir 1/2 cup of the warm water into the yeast, honey and salt. Cover and stand for 5 minutes or until bubbles appear on the surface.
  • 2. Sift both flours into a large bowl. Stir 1 Tbsp olive oil, remaining 3/4 cup warm water, and the yeast mixture into the flour, stirring until soft dough forms. Turn dough out onto a lightly floured surface. Knead for 10 minutes or until smooth.
  • 3. Grease 2 standard size baking trays (cookie sheets); set aside.
  • 4. Divide dough in half. Knead dough halves for 1 minute each. Shape each kneaded dough portion into a flat 8- to 9-inch round loaf. Place 1 on each prepared tray. Cover with plastic wrap and stand in a warm place for 1 hour or until doubled in size.
  • 5. Preheat oven to 400°F (200°C).
  • 6. Brush loaves with remaining oil. Sprinkle sesame seeds on top. Bake for 15 to 18 minutes or until golden and cooked through. Serve warm.
