MOROCCAN GROUND BEEF KEBAB / SKEWERS

Ground beef kebabs can be bought from street vendors in Morocco. They are served with thick bread instead of utensils. Moroccans use the bread to break off a chunk of meat & then pop it into their mouth. (The times listed does not included 1 hour in the fridge.)

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 11

2 lbs ground beef
1/2 medium onion, grated
2 garlic cloves, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh cilantro, finely chopped
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2-1 teaspoon cayenne pepper
1/2 teaspoon ras el hanout spice mix, Ras El Hanout - Moroccan Spice Mix

Steps:

  • Combine the beef, onion, parsley, cilantro, & spices in a large bowl, refrigerate for 1 hour.
  • Wash your hands but don't dry them. Gently pack small amounts of the meat mixture around the skewers, forming a 4-inch long sausage shape on each skewer.
  • Grill over charcoal, turning the kebab time to time so not to burn. Cook throughly. Serve with Recipe #260654 or some other dense bread.

MOROCCAN BEEF KEBAB / SKEWERS

This is a nice variation from ordinary kebabs. The longer you let the meat marinate, the more tender it will be when you cook it. (The times listed below does not include marinating time).

Categories     Meat

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

1 1/2-2 lbs beef stew meat, less than 1 inch thick
2 tablespoons parsley, finely chopped
1/3 cup olive oil
1/2 small onion, grated
1 tablespoon tomato paste
1 tablespoon vinegar
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Cut any large pieces of meat in half so they will cook faster. Then place the beef cubes in a medium bowl. Chop the parsley & add it to the beef, set aside to be used later.
  • Pour the olive oil in a small glass bowl. Add the spices, vinegar & tomato paste, stir until well blended. Grate the onion & add it to the oil mixture.
  • Stir the mixture in with the beef until it is well coated. Cover with a lid & place in the refrigerator to marinate for at least 2 hours.
  • Place the beef on skewers, leaving a little gap between each piece. Grill on each side until the meat is no longer pink inside, between 10-15 minutes.
  • Serve with thick bread instead of utensils. (Moroccans eat most of their food with their right hand, using only bread to scoop up the meal).

Tips:

  • Use high-quality beef for the best flavor and texture. Look for cuts that are well-marbled with fat, such as rib eye, strip steak, or tenderloin.
  • Cut the beef into 1-inch cubes for even cooking. If the pieces are too large, they will not cook evenly. If they are too small, they will dry out.
  • Marinate the beef for at least 30 minutes, or up to overnight. This will help to tenderize the meat and infuse it with flavor.
  • Use a variety of spices in the marinade to create a flavorful kebab. Common spices used in Moroccan cuisine include cumin, coriander, paprika, and turmeric.
  • Skewer the beef onto metal or wooden skewers. If using wooden skewers, soak them in water for 30 minutes before using to prevent them from burning.
  • Cook the kebabs over a medium-high heat until the beef is cooked through. The cooking time will vary depending on the thickness of the beef cubes.
  • Serve the kebabs with a variety of dipping sauces, such as tzatziki sauce, hummus, or tahini sauce.

Conclusion:

Moroccan beef kebabs are a delicious and easy-to-make dish that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that your family and friends will love.
