MONTREAL RUBBED CHICKEN

I came up with this meal when I wanted something simple to put together, but packed with flavor. This recipe is done in the oven, but can be also grilled. I served it with a simple salad and crusty French bread. Roasted vegetables, rice pilaf and buttered noodles would also be great side dishes for this recipe.

Time 50m

Yield 8 to 10 servings

Number Of Ingredients 7

2 sticks butter
Juice of 2 to 3 lemons
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
4 cloves garlic, minced
24 whole chicken legs

Steps:

  • Preheat the oven to 450 degrees F. Line baking sheets with foil.
  • Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
  • Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
  • Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.
  • Place them into the oven for 30 to 35 minutes, basting a couple of times during roasting. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely.
  • Remove them when they are nice and golden brown and fully cooked.

Tips:

  • Use a variety of spices: The blend of spices used in Montreal-spiced chicken is what gives it its unique flavor. Be sure to use a variety of spices, including paprika, garlic powder, onion powder, black pepper, and dry mustard.
  • Marinate the chicken overnight: Marinating the chicken overnight allows the spices to penetrate the meat and develop a deeper flavor. If you don't have time to marinate the chicken overnight, you can marinate it for at least 30 minutes.
  • Roast the chicken at a high temperature: Roasting the chicken at a high temperature helps to create a crispy skin and juicy meat. Be sure to preheat your oven to the correct temperature before roasting the chicken.
  • Use a meat thermometer: The best way to ensure that the chicken is cooked through is to use a meat thermometer. Insert the meat thermometer into the thickest part of the chicken thigh and cook until the internal temperature reaches 165 degrees Fahrenheit.
  • Let the chicken rest before serving: Letting the chicken rest before serving allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful chicken.

Conclusion:

Montreal-spiced oven-baked chicken legs are a delicious and easy-to-make dish that is perfect for any occasion. The blend of spices gives the chicken a unique flavor that is sure to please everyone. Whether you are serving it for a weeknight dinner or a special occasion, Montreal-spiced oven-baked chicken legs are sure to be a hit.
