1 can (8 oz.) tomato sauce
2 cups shredded cooked turkey
2 Tbsp. chopped canned chipotle peppers in adobo sauce, divided
6 eggs
2 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream
1 cup KRAFT Finely Shredded Colby & Monterey Jack Cheeses, divided

Steps:

  • Heat oil in large saucepan on medium-high heat. Add onions; cook 5 min. or until crisp-tender, stirring frequently. Add tomato sauce, turkey and 1 Tbsp. peppers; stir. Cook 5 min. or until heated through, stirring occasionally.
  • Whisk eggs, sour cream and remaining peppers until well blended. Heat large skillet sprayed with cooking spray on medium heat. Add half the egg mixture; cook 3 min. Top with 1/2 cup cheese and half the turkey mixture; cover. Cook 3 min. or until cheese is melted. (Do not stir - eggs should resemble an open-face omelet.) Remove from skillet; roll up. 1 tablespoon olive oil
2 teaspoons unsalted butter
1 tablespoon chopped fresh shiitake mushroom
1 shallot, finely chopped
¼ teaspoon salt
1 fresh sage leaf, minced
¼ teaspoon crushed red pepper flakes
¼ cup shredded cooked turkey
1 teaspoon dry vermouth
2 eggs, chilled
1 pinch ground white pepper
2 teaspoons olive oil
1 tablespoon creme fraiche

Steps:

  • Heat 1 tablespoon of olive oil and butter in a skillet over medium-low heat, and stir in the shiitake mushroom, shallot, salt, red pepper flakes, and sage. Cook and stir until the shallot is translucent, about 5 minutes. Mix in the turkey and vermouth, and stir for a minute or two just to heat; remove from heat.

1/4 cup heavy cream
1 tablespoon finely chopped fresh chives, plus more for garnish
1 tablespoon finely chopped fresh tarragon, plus more for garnish
1 teaspoon sea salt
1 tablespoon crushed black peppercorns
2 to 3 tablespoons unsalted butter
3 thick slices peppered bacon, cooked until crisp
1/2 ripe avocado, sliced
3 slices Monterey Jack
Fresh chervil leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Crack the eggs into a medium mixing bowl and pour in the cream. Add the chives, tarragon, salt and pepper and whisk until well incorporated and foamy.
  • Preheat an 8-inch skillet over medium heat. Add the butter and turn the heat down slightly. With a 4-ounce ladle, add one ladle of eggs to the pan. Immediately begin stirring with a spatula. 2 1/2 tablespoons all-purpose flour
1 dash salt
1 dash white pepper
1 cup nonfat milk
1 pinch ground nutmeg
2 large egg yolks
1/3 cup shredded gruyere cheese
1 lb spinach, stems removed
cooking spray
8 large eggs
2 tablespoons water
1 large tomatoes, 8 slices

Steps:

  • MORNAY SAUCE: Gently melt butter in non-stick saucepan, Don't let it sizzle.
  • Add flour, salt, and white pepper. Stirring over med heat with wooden spoon for a few minutes to let flour cook and to blend everything, if you don't cook it long enough at this stage, the sauce will taste floury, how ever you do not want it to brown at all.
  • Gradually add milk Stirring constantly, as it is thickens add more milk constantly stirring. Cook for 5 minutes, stirring.
  • Beat yolks in cup, add a little of the hot sauce to the yolks; beating quickly, pour into main sauce, beating vigorously.
  • Return sauce to heat add cheese and nutmeg, cook til cheese melts, stirring constantly. Remove from heat. Cover and keep warm. Stirring occasionally to keep skin from forming.
  • Prepare spinach Spray large non stick skillet with pan spray, heat to med-high add spinach. Cook for about 5-8 minutes, or until liquid is cooked out. Set aside and keep warm.
  • Make omelet, beat eggs and water in bowl til blended. Spray 8" nonstick skillet with pan spray, heat to med-high, pour about 1/2 cup egg into hot skillet. Cook omelet.
  • Spread a bit sauce on omelet, top with 1/4 the spinach. Fold edge over by about a third, jiggling omelet to far edge of pan, roll out onto warm plate, ending with seam side down. Repeat with remaining egg.
  • Swag sauce over middle of omelets diagonally.
  • Garnish with tomato slices.
