1 cup plus 1 tablespoon (145 grams) all-purpose flour, plus more for dusting
Pinch kosher salt
2 cups (480 grams) whole milk
1 tablespoon (22.5 grams) vanilla bean paste
1/4 teaspoon (1 gram) kosher salt
1/2 cup plus 1 tablespoon (120 grams) sugar
1/4 cup plus 2 tablespoons (60 grams) cornstarch
5 large egg yolks (90 grams)
4 tablespoons (55 grams) unsalted butter, cut into 1-inch cubes
1/3 cup jarred hot fudge sauce, such as C.C. Brown's Original Hot Fudge Sauce
3 large bananas, thinly sliced on the bias
2 tablespoons sugar

Cover with plastic wrap, pressing it directly onto the surface of the pastry cream, and refrigerate until chilled through, about 2 hours.
  • For the assembly: Spread the fudge sauce over the cooled tart shell and top with an even layer of thinly sliced bananas (using about half). Add a layer of pastry cream (about 1 cup) and smooth into an even layer; reserve the remaining cream for another use (see Cook's Note). Top with the remaining sliced bananas, shingling them slightly and arranging them in a concentric circle. Sprinkle the sugar over the bananas and brulee with a kitchen blow torch until golden brown.
