Time 45m

Number Of Ingredients 6

5 medium size perfectly ripe bananas (no brown spots)
20 oz whole can of crushed pineapple, do not drain
1/2 c coconut, shredded or flaked or ground
3 1/2 c sugar
3 Tbsp lemon juice concentrate
1 box pectin (optional)

Steps:

  • 1. Add all your ingredients except bananas into a heavy saucepan then lastly slice up your bananas and turn on the heat. Bring to a boil, stirring often.
  • 2. I used a potato masher to get the bananas to the consistency I wanted. Once you have it to a boil reduce the heat to a simmer. Cook until it thickens to your desired texture. Make sure you are stirring often. Now, this didn't take long for mine maybe 10 - 12 minutes or so cooking including the boiling point.
  • 3. Once ready spoon mixture into sterilized hot jars and seal with lids. Then process with a 15 minute hot water bath.

MONKEY BANANA JAM

This is a family favorite. It's very good on toast, especially beer-bread toast. (Recipes available from this site.) Try it with peanut butter for a great sandwich. You can also use it to top ice cream. It's popular with banana-lovers young and old. This can be frozen, but it will darken. As written, it's fine, but you can experiment with spices too. Cinnamon, nutmeg, ginger, lemon/orange peel are all good candidates. Pick one or two for variety.

MONKEY BANANA JAM

I'm always looking for ideas for canning. I ran across this recipe on allrecipes. Great way to use up over ripe bananas!

Provided by Amy Freeman

Categories     Jams & Jellies

Number Of Ingredients 5

2 lb perfectly ripe bananas (no brown spots)
2 c fresh pineapple chunks (or 2 20oz cans drained)
2 c white sugar (1 cup less if using sweetened-flaked coconut or canned sweetened pineapple)
1 lemon, zest and juice
1/2 c flaked coconut, any kind (natural or sweetened) (optional)

Steps:

  • 1. Peel and slice bananas, and add all ingredients together in a large preserving pan. Bring to a boil, stirring often, and then reduce to a simmer for the next 15 minutes. (Cook until thick...it might take several more minutes, or it might take as few as 10 minutes.)
  • 2. While the mixture is simmering, use a potato masher, or large sturdy slotted spoon, to periodically mash the fruit down, between bouts of stirring to prevent any preserves from sticking
  • 3. Once desired thickness has been achieved, spoon mixture immediately into hot sterilized jars. Look for any air bubbles in the jars of Monkey Butter and if you see any, use a chopstick or plastic knife to pop them before wiping rims clean and sealing
  • 4. Process for 15 minutes in a Boiling Water Bath.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter and more flavorful the monkey butter will be.
  • Don't overcook the bananas. Overcooked bananas will become mushy and lose their flavor.
  • Add spices to taste. Common spices used in monkey butter include cinnamon, nutmeg, and cloves. You can also add a pinch of cayenne pepper for a little heat.
  • Serve monkey butter warm or cold. Monkey butter can be served warm as a spread on toast or crackers, or it can be chilled and served as a dip for fruit or pretzels.

Conclusion:

Monkey butter is a delicious and versatile spread or dip that is easy to make at home. It is a great way to use up ripe bananas and can be enjoyed by people of all ages. Whether you are looking for a quick and easy snack or a unique addition to your next party, monkey butter is sure to please.
