MONKEY BANANA JAM
This is a family favorite. It's very good on toast, especially beer-bread toast. (Recipes available from this site.) Try it with peanut butter for a great sandwich. You can also use it to top ice cream. It's popular with banana-lovers young and old. This can be frozen, but it will darken. As written, it's fine, but you can experiment with spices too. Cinnamon, nutmeg, ginger, lemon/orange peel are all good candidates. Pick one or two for variety.

Steps:
- 1. Peel and slice bananas, and add all ingredients together in a large preserving pan. Bring to a boil, stirring often, and then reduce to a simmer for the next 15 minutes. (Cook until thick...it might take several more minutes, or it might take as few as 10 minutes.)
- 2. While the mixture is simmering, use a potato masher, or large sturdy slotted spoon, to periodically mash the fruit down, between bouts of stirring to prevent any preserves from sticking
- 3. Once desired thickness has been achieved, spoon mixture immediately into hot sterilized jars. Look for any air bubbles in the jars of Monkey Butter and if you see any, use a chopstick or plastic knife to pop them before wiping rims clean and sealing
- 4. Process for 15 minutes in a Boiling Water Bath.
Tips:
- Choose ripe, spotty bananas for the best flavor.
- Use a food processor or blender to puree the bananas until they are completely smooth.
- Add sugar, lemon juice, and spices to taste. You can also add other fruits, such as pineapple or mango, for a fun twist.
- Cook the jam over medium heat, stirring constantly, until it has thickened and reached a spreadable consistency.
- Pour the jam into sterilized jars and seal tightly. Process the jars in a boiling water bath for 10 minutes to ensure a long shelf life.
Conclusion:
Monkey Banana Jam is a delicious and versatile spread that can be enjoyed on toast, pancakes, waffles, or ice cream. It is also a great addition to smoothies, yogurt parfaits, and oatmeal. With its unique flavor and texture, Monkey Banana Jam is sure to become a favorite in your home. So next time you have some overripe bananas, don't throw them away! Turn them into a jar of delicious Monkey Banana Jam instead.
