MONA'S EASY REFRIGERATOR PICKLES

I got this recipe from an old family friend. She used to make us these pickles when we were kids. It is a really simple recipe, and the hardest part is not eating the pickles before they are ready. You can add pimentos, sliced bell peppers, or whole garlic cloves to the vinegar solution as alternative options.

Tips:

  • Choose the right cucumbers: Look for firm, unblemished cucumbers that are about 6 inches long. Smaller cucumbers will pickle more evenly.
  • Use a clean jar: Make sure the jar you use for pickling is clean and free of any cracks or chips. A wide-mouth jar is ideal, as it will make it easier to pack the cucumbers.
  • Use a flavorful brine: The brine is what will give your pickles their flavor, so make sure to use a combination of vinegar, water, sugar, and spices that you enjoy. You can also add other ingredients, such as garlic, onion, or dill, to taste.
  • Let the pickles rest: After you have made the pickles, let them rest for at least a week before eating them. This will allow the flavors to develop and mellow.
  • Store the pickles properly: Once the pickles are ready, store them in a cool, dark place. They will keep for several months.

Conclusion:

Making refrigerator pickles is a great way to preserve cucumbers and enjoy them all year long. With a little planning and effort, you can easily make delicious pickles that will be a hit with your family and friends. So next time you have a bumper crop of cucumbers, don't let them go to waste. Make a batch of refrigerator pickles instead!
