2 tablespoons olive oil
1 cup diced onion
1 cup diced green bell pepper
1 tablespoon minced fresh garlic
1 pound ground beef, 80/20
½ teaspoon dry mustard
2 teaspoons chili powder
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
½ cup uncooked long grain white rice
2 tablespoons tomato paste
1 14.5-ounce can diced tomatoes with juice
1 cup water
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, optional and not shown in our photo

Steps:

  • In a skillet that has a tight fitting cover, heat olive oil over medium high.
  • Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  • Add rice and cook for two minutes letting rice absorb liquid.
  • Add tomato paste and cook for one minute.
  • Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
  • After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  • If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

1 lb ground beef
3 large onions, sliced
1 large green bell pepper, chopped
1 can(s) (16 oz) tomatoes
1/2 c uncooked rice
2 tsp salt
1 to 2 tsp chili powder

Steps:

  • 1. In a large skillet, cook and stir meat, onions and green pepper until meat is brown and vegetables are tender. Drain well.
  • 2. Stir in tomatoes, rice, salt, chili powder and pepper. Heat thoroughly.
  • 3. Pour into ungreased 2 quart casserole dish. Cover and bake at 350 for 1 hour.

1 cup uncooked instant rice
1 pound lean ground beef
2 onions, chopped
1 large green bell pepper, chopped
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 (8.75 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices processed American cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
  • In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
  • In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
  • Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
  • Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
  • Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.

1 1/2 lbs hamburger
1 medium onion
1 (16 ounce) can diced tomatoes
chili powder, to taste
Worcestershire sauce, to taste
salt, to taste
pepper, to taste

Steps:

  • Brown and drain hamburger and onion.
  • In a pot, add hamburger, onion, and tomatoes.
  • Put in some Worcestershire sauce (1 - 2 tsp), chili powder, salt and pepper to taste. I just keep adding stuff until it tastes good.
  • Let Simmer 20 minutes or so.
