  • 5. Add spinach mixture.
  • 6. Top the layer of spinach with 7 phyllo sheets. Again, alternate with phyllo, then butter, then phyllo etc. Top layer should be buttered.

  • 8. Cut with hot, sharp, clean knife in squares or cut at an angle for diamond shapes.

This is my mom's recipe for Spanakopita. She makes it with more feta than spinach, just the way I like it. (I made the spanakopita in the picture with my friend Seth in my dorm's kitchen.)

Tips:

  • Prep the Spinach: Before using, ensure the spinach is cleaned and chopped finely. Removing excess moisture by squeezing it out with a cheesecloth or paper towels is essential for a crispy spanakopita.
  • Use Fresh Herbs: Fresh herbs like dill, oregano, and parsley provide an aromatic touch. If using dried herbs, reduce the quantity by half.
  • Balance Flavors: Taste the filling before baking. Adjust seasonings like salt, pepper, and lemon juice according to your preference. A harmonious balance of tangy, salty, and savory flavors is the key.
  • Layer the Phyllo Dough: Use a pastry brush to lightly grease each layer of phyllo dough with melted butter. This helps create crispy and flaky layers.
  • Bake at High Temperature: Preheat your oven to a high temperature (400°F or above) to achieve a golden brown and crispy crust.
  • Cover While Cooling: After baking, cover the spanakopita with a clean kitchen towel or foil to prevent the crust from becoming dry and tough.
