MEATLOAF - FAMILY SECRET INGREDIENT

Meatloaf - Family Secret Ingredient image

This is my mom's recipe and we loved it so much. You can use a mixture of ground beef, veal and pork if desired. This is a slightly different meatloaf, than what most people are familiar with. After they taste it, they ask for the recipe. This makes a great leftover fried meatloaf sandwich. (Just a note: If my Mom or I make the meatloaf, it falls apart, if my Dad makes it, it stays together...so good luck with yours!)

Mom's Secret Ingredient Meatloaf image

My mother made the best meatloaf in town, but would never share her recipe saying it was just a basic meatloaf recipe with a "secret ingredient". Now all MY family and friends beg for this meatloaf, but only my daughter knows the secret ingredient -- now you will too. You will get raves on this one!

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 10

2 -2 1/2 lbs ground chuck
1 large egg
1 cup finely chopped onion (, or you can use 2-3 Tblp dried onion flakes if the kids object to actually seeing the onion)
1 cup milk
3 pieces bread, crumbed in food processor
1 teaspoon salt
1/8 teaspoon pepper
1/3-1/2 cup Heinz Chili Sauce (NO SUBSTITUTION on this ingredient)
1/2 cup catsup
1/2 cup shredded mild cheddar cheese or 1/2 cup shredded monterey jack cheese

Steps:

  • Mix ground chuck with breadcrumbs.
  • (extra lean works well too).
  • Add salt,pepper and egg.
  • Mixing with you hands now, add the Heinz Chili Sauce and the milk.
  • Seperate the mixture in half and form 2 loaves.
  • They will both fit comfortably in a 13" by 9" pan.
  • Mix the topping together and spread on the top and the sides of the loaves.
  • Cook at 375 for one hour or 400 for 45 minutes.
  • Check for firmness.
  • Let rest for ten minutes before cutting.
  • Tips---------.
  • If you have stale bread you can lay 2 slices under each loaf and it will soak up the grease so your meatloaf is a bit leaner upon serving.
  • Also, you can use the Chili Sauce on top of the meatloaf instead of catsup.
  • This makes it spicier but my mother never did this because it would have given away her"Secret Ingredient" -- and the kids probably will like it better with catsup on top.
  • Enjoy!

Tips:

  • Use a variety of meats: Mixing ground beef with other meats like ground pork or veal adds flavor and richness to the meatloaf.
  • Don't overwork the meat: Overworking the meat will make the meatloaf tough. Mix the ingredients just until they are combined.
  • Use a moist breadcrumb mixture: The breadcrumb mixture helps to bind the meatloaf together and keeps it moist. Use a combination of fresh and dry breadcrumbs, and soak them in milk or broth before adding them to the meat mixture.
  • Add plenty of seasonings: Season the meatloaf generously with salt, pepper, and other herbs and spices. This will help to enhance the flavor of the meatloaf.
  • Cook the meatloaf at a low temperature: Cooking the meatloaf at a low temperature (350°F) will help to prevent it from drying out. Cook the meatloaf until it reaches an internal temperature of 160°F.
  • Let the meatloaf rest before slicing: Let the meatloaf rest for at least 10 minutes before slicing. This will help the juices to redistribute throughout the meatloaf, making it easier to slice and serve.

Making a delicious and moist meatloaf is easy with the right ingredients and techniques. By following the tips in this article, you can create a mouthwatering meatloaf that your family and friends will love.
