OLD FASHIONED RHUBARB CUSTARD PIE LIKE MOM USED TO MAKE
This rhubarb custard pie is a beautiful way to mellow the tartness of rhubarb in a smooth, creamy filling.

Steps:
- Preheat the oven to 450° F. Roll out half of the pastry dough. (Keep the dough for the top crust chilled.) Line the pie plate with the bottom crust.
- Combine 1 cup of sugar with 2 tablespoons of flour. Mix in eggs and rhubarb. Sprinkle the remaining tablespoon of flour into the bottom of the crust. Pour rhubarb filling into the bottom crust.
- Roll out top crust (if desired). Cut vent holes or weave into lattice. Apply to top of pie. Crimp edges to seal.
- Sprinkle 1 tablespoon of sugar over the crust. (Skip if using a single crust.)
- Bake at 450 F for 10 minutes to set the crust. Reduce the oven temperature to 350 F and bake about 30 minutes more or until the custard is set. Cool before serving. Store any leftovers in the refrigerator.

- 1. Add flour, dash of salt,and crisco together cut crico in till it looks like peas.
- 2. Add cool water with fork mix to form a ball.
- 3. Put on floured surface and roll with rolling pin till round and fits in pie pan. Flute edges and cut off excess.[ Or use store bought pie crust.]
- 4. Pour boiling water into bowl with 4 cups rhubarb. [let stand 10 min.] Drain
- 5. Mix flour, sugar, and eggs add drained rhubarb mix well. Pour into pie shell.
- 6. Mix flour, brown sugar,and oatmeal in a bowl.Using fork or fingers cut in butter till mixed well .Spead over filling.
- 7. Bake at 350 degrees 1 hr. or untill knife comes out clean.

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. - 1. Preheat oven @ 400 degrees.
- 2. Mix together ingredients for pie filling and pour into 9" deep dish pie crust (I sometimes cheat and use a frozen pie crust shhh) and bake at 400 for 10 minutes. Reduce oven to 350 degrees and bake until thick (approximately 30 minutes).
- 3. Meringue Topping: Beat egg whites from 2 eggs until egg whites become stiff. Add 3 drops of vanilla and 2 tablespoons of powdered sugar and beat again to mix. Spoon meringue on top of pie making peaks with a rubber spatula (or whatever works best for you). Place in oven until meringue is lightly browned (approximately 7-10 minutes).

- Preheat the oven to 350 degrees F. Fit the pie dough into a 9-inch pie plate, fluting the edges, and chill until set, about 15 minutes. - Preheat oven to 350 degrees.
- Crust:.
- In a bowl mix butter, flour and sugar. Press into an ungreased 9 x 13 baking dish. Bake for 10 minutes. Remove from oven and allow to cool while mixing other ingredients.
