Such an easy, yummy pie! Enjoy! Make sure you use a 9 inch, standard pie plate as I didn't and it ran over. I had a store bought crust (which was smaller than the average pie plate) I wanted to use up. Fresh crust is best.

COCONUT CHESS PIE

Coconut Chess Pie image

The epitome of Southern simplicity, the chess pie comes in all form and flavors, and its name is the subject of friendly foodie debate. Some say it came from a conversation between a Southern gentlemen and his cook, wherein he asked what kind of pie she was serving, and she shrugged and responded, "It's just pie." Those familiar with the accents of the deep South will know how easily "just" could have been translated "chess". And it truly is "just pie": a simple, one bowl affair that is the staple of the Southern cook that is pure comfort food.

Time 50m

Yield 2 pies

Number Of Ingredients 8

4 large eggs
2 teaspoons flour
2 cups sugar
1/2 cup butter, softened
1 teaspoon vanilla
1 cup milk
2 cups flaked coconut
2 unbaked pie crusts

Steps:

  • Preheat the oven to 350 degrees. In a large bowl, beat the eggs, then beat in the flour and sugar. Beat in the butter, vanilla and milk, then add the coconut.
  • Pour the filling into the unbaked crusts and bake until golden and the filling is set, 40-45 minutes.

Tips:

  • Use fresh or frozen pineapple: Fresh pineapple is best, but frozen pineapple can be used if thawed and drained thoroughly. If using frozen pineapple, be sure to thaw it completely before using so that it doesn't water down the pie.
  • Use unsweetened coconut milk: Unsweetened coconut milk is essential for this pie, as it provides a rich and creamy flavor without being too sweet. If you only have sweetened coconut milk on hand, you can use it, but be sure to reduce the amount of sugar in the recipe.
  • Don't overmix the filling: Overmixing the filling will make the pie tough. Be sure to mix the ingredients just until they are combined.
  • Blind-bake the pie crust: Blind-baking the pie crust ensures that it is fully cooked and prevents it from becoming soggy. To blind-bake the crust, preheat the oven to 350°F (175°C) and bake the crust for 15-20 minutes, or until it is golden brown.
  • Let the pie cool completely before serving: The pie needs to cool completely before serving so that the filling has time to set. Letting the pie cool also makes it easier to slice.

Conclusion:

This Mom's Pineapple Coconut Chess Pie is a delicious and easy-to-make dessert that is perfect for any occasion. The combination of pineapple, coconut, and chess filling is simply irresistible. Follow these tips to make the best pie possible, and be sure to let us know how it turns out!
