PAELLA
Paella is a Spanish dish traditionally made with rice, saffron, a variety of meat and shellfish, garlic, onions, peas, tomatoes and other vegetables. It's named for the wide, shallow pan it's cooked in, but I cook mine on the stovetop with delicious results.

Tips for Making Authentic Mom's Paella
- Use high-quality ingredients: Fresh seafood, bomba or Valencia rice, and flavorful vegetables are essential for making a delicious paella.
- Choose the right pan: A traditional paella pan is ideal, but a large, shallow skillet or Dutch oven can also be used.
- Prepare the seafood and vegetables: Clean and devein the seafood, and chop the vegetables into bite-sized pieces.
- Toast the rice: This step helps to bring out the flavor of the rice and prevent it from becoming mushy.
- Add the liquid: Use a combination of chicken broth and water, or use all broth for a more flavorful paella.
- Bring the paella to a boil: Then reduce the heat to low and simmer for about 20 minutes, or until the rice is cooked through.
- Add the seafood and vegetables: Arrange the seafood and vegetables on top of the rice and continue to cook for another 10 minutes, or until the seafood is cooked through.
- Let the paella rest: After cooking, let the paella rest for 5-10 minutes before serving. This allows the flavors to meld and the rice to absorb the remaining liquid.
