JIFFY CINNAMON ROLLS WITH CREAM CHEESE FROSTING

Jiffy Cinnamon Rolls with Cream Cheese Frosting image

These cinnamon rolls are wonderfully versatile as they can be frozen after you cut them or placed in the refrigerator and baked in the morning.

Provided by WineGal

Categories     Breads

Time 50m

Yield 12 rolls

Number Of Ingredients 13

4 -5 cups all-purpose flour
1 box jiffy cake mix
2 packages fast rising yeast
1 teaspoon salt
2 cups warm water
2 tablespoons butter
1/2 cup sugar
1 tablespoon cinnamon
1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a large mixing bowl, combine 3 cups flour, cake mix, yeast, salt, and warm water; mix until smooth.
  • Add enough remaining flour to form a soft dough.
  • Turn out onto a lightly floured surface and knead until smooth (6-8 minutes).
  • Roll dough into a 9 X 18-inch rectangle.
  • Spread with butter and sprinkle with sugar and cinnamon.
  • Roll dough jelly-roll style, starting with the long end.
  • Slice the roll into 1-inch circles with a piece of dental floss or heavy thread placed under roll.
  • Bring ends of floss up and crisscross at top of roll and pull strings in opposite directions.
  • Place rolls on a greased cookie sheet.
  • Cover and let rise on a warm place until doubled, about 15 minutes.
  • Bake at 350 for 15-18 minutes.
  • While rolls are baking, beat together cream cheese, butter, confectioners sugar, vanilla extract, and salt.
  • Spread frosting on warm rolls before serving.

Tips:

  • Activate the yeast properly: Always check the expiration date on the yeast packet. Use warm milk (110-115°F) to activate the yeast. If the milk is too hot, it can kill the yeast and if it is too cold, it will not activate it properly.
  • Knead the dough until it is smooth and elastic: This will help develop the gluten in the dough, which will make the rolls light and fluffy. Knead the dough for at least 5-7 minutes.
  • Let the dough rise in a warm place: This will help the yeast to multiply and the dough to expand. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  • Roll out the dough evenly: Use a rolling pin to roll out the dough into a 12x18 inch rectangle. The dough should be about 1/4 inch thick.
  • Spread the cinnamon sugar filling evenly: Use a spoon or spatula to spread the cinnamon sugar filling over the dough. Make sure to spread it all the way to the edges.
  • Roll up the dough tightly: Starting from the long side, roll up the dough tightly into a log. Pinch the seam to seal it.
  • Cut the rolls into even pieces: Use a sharp knife to cut the log into 12 even pieces. Place the rolls in a greased 9x13 inch baking dish.
  • Let the rolls rise again: Cover the rolls with plastic wrap and let them rise in a warm place for about 30 minutes, or until they have doubled in size.
  • Bake the rolls until they are golden brown: Bake the rolls in a preheated 350°F oven for about 25-30 minutes, or until they are golden brown. Let the rolls cool slightly before serving.

Conclusion:

These cinnamon rolls are a delicious and easy treat that are perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a batch of homemade cinnamon rolls that will rival any bakery. So next time you are looking for a special breakfast or dessert, give this recipe a try. You won't be disappointed!
