BASIC BRINE
3 c water
2 c ice cubes
1/4 c Kosher salt
1/4 c sugar
PORK CHOPS
6 bone-in pork chops
1 egg, beaten with a little water to make an egg wash
Italian bread crumbs
vegetable or canola oil
1/2 large onion, sliced thin
2 clove garlic, minced
1 1/2 c chicken broth
1/2 c dry white wine
1/2 tsp dried parsely flakes
1/4 tsp dried basil
1/4 tsp freshly ground black pepper (or to taste)

Steps:

  • 1. Place all brine ingredients in a plastic bowl that has a tight-fitting lid. Stir. Add pork chops. Cover and keep in the fridge for at least 4 hours. (I know this is an extra step but it really makes the pork chops super tender.)
  • 2. Remove pork chops from brine and pat dry with a paper towel.
  • 3. Dip pork chops in egg wash.
  • 4. Then Italian bread crumbs to coat.
  • 5. Heat oil in a large skillet. Just enough to coat the bottom. Fry pork chops in the skillet for approximately 3 minutes per side. They should be a nice golden brown.
  • 6. Then set them aside.
  • 7. Remove oil from skillet leaving approximately one tablespoon. Add the onions to the skillet and saute on medium heat until translucent - about 5 minutes. Add the minced garlic and cook for one more minute - stirring.
  • 8. Add the chicken broth and white wine.
  • 9. Add seasonings to the skillet. Simmer over low heat for about 5 minutes.
  • 10. Put the pork chops back into the skillet with the chicken broth mixture. I place them around the sides of the skillet overlapping slightly to form a circle.
  • 11. Cover and cook over low heat for approximately 20 minutes. Serve over rice or noodles.

COUNTRY PORK CHOP AND RICE BAKE

Country Pork Chop and Rice Bake image

A simple Country Pork Chop and Rice Bake is an easy dinner recipe with just 10 minutes of prep.

Provided by Blair Lonergan

Categories     Dinner

Time 1h10m

Number Of Ingredients 9

1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

MOM'S INDIAN PORK CHOPS & RICE

Mom's Indian Pork Chops & Rice image

I don't even like pork chops and I LOVE these! This is Mom's recipe, the only way I'll eat pork chops. Mom used bone-in pork chops, but it's easier to serve if you use boneless. See my sister puppitypup's variation, Recipe #182540.

Categories     One Dish Meal

Time 1h20m

Yield 4 , 4 serving(s)

Number Of Ingredients 10

4 pork chops
1 teaspoon dry mustard
1 teaspoon ground cloves
1 teaspoon olive oil
1/2 large onion, cut to four 1/4-inch slices
1 large tomatoes, cut to four 1/2-inch slices
1 (10 3/4 ounce) can cream of mushroom soup
1 (6 ounce) can sliced mushrooms
1/2 cup water
3 cups cooked rice, hot

Steps:

  • Preheat oven to 350 degrees. Grease 9" X 9" casserole pan. Start rice cooking.
  • Rub pork chops with dry mustard and cloves, brown on both sides in skillet with 1 tsp olive oil. Arrange pork chops in pan. Place one onion slice and then one tomato slice on top of each pork chop.
  • Drain mushrooms (retain liquid), set mushrooms aside. Mix soup, mushroom liquid and water. Add to rice and mix well. Cover entire dish with rice mixture, being careful not to dislodge the onions and tomatoes from the chops, and filling in between chops so that there are no gaps. Spoon sliced mushrooms over top of rice mixture.
  • Bake, covered, at 350 degrees for 55-65 minutes.
  • Serve with a spatula to preserve your nice chop/tomato/onion stack.

Tips:

  • Use quality pork chops. The best pork chops for this recipe are bone-in, center-cut pork chops. They should be at least 1 inch thick.
  • Tenderize the pork chops. To make the pork chops more tender, you can pound them with a meat mallet or score them with a sharp knife.
  • Use a flavorful breading. The breading for the pork chops should be flavorful and crispy. A good option is to use a mixture of flour, bread crumbs, Parmesan cheese, garlic powder, and onion powder.
  • Cook the pork chops over medium heat. Cooking the pork chops over medium heat will help to prevent them from drying out.
  • Do not overcook the pork chops. Overcooked pork chops will be dry and tough. Cook the pork chops until they are just cooked through, about 5-7 minutes per side.
  • Serve the pork chops with your favorite sides. Some good options include mashed potatoes, roasted vegetables, or a simple salad.

Conclusion:

Pork chops are a delicious and versatile dish that can be cooked in a variety of ways. This recipe for Mom's Indiana Pork Chops is a simple and flavorful way to prepare pork chops. The pork chops are breaded and fried until golden brown, then served with a creamy mushroom gravy. This dish is sure to be a hit with your family and friends.
